Vegetables don’t cook in sauces

Say I’m making a curry and I chuck in some broccoli peppers and carrots, they never seem to cook through soft even after a long time. Why is this when on their own they would cook in 10 mins on the hob

Because when you cook veg in water you're actually boiling them quite hard, which you're not in a sauce.

Have you got enough sauce to cover the lot? Also, I think if your sauce is too thick, it won't permeate the veg and cook it through

If you cut your veg small enough it won't matter. Broccoli, peppers, and carrot can all be eaten raw so the cooking should be about the flavour.
