Recommendations for a cookbook for foodie tween

Ds1 is 12, says he wants to be a chef. Very precise by nature, likes to follow instructions. Can anyone recommend a good book to learn techniques (not too chefy but not just recipes either)? I had the prue leith cookery bible which explains why things go wrong, gives basic recipe plus variations so something like that would be good.

Delia Smiths Cookery Course. Starts with simple stuff like poached eggs and omelettes but the recipes are very interesting. Neither basic nor very high end.

My kids like Nigella Express. Her books are quite chatty and these are easy recipes with yummy foods your son will recognise (chilli, curry, frittata etc). Every one we’ve done has been successful. As they are ‘Express’ they are by definition not too complicated or too long. Just perfect for a tween.

Another vote for Delia Smith's complete cookery course. Everybody should have that as their cooking bible and she says things like "now don't worry if it cuddles, add a but more flour then continue."

She also more recently published "how to cook" which I think is pretty much exactly what you'e asking for.

I was going to recommend Lateral Cooking but see Ricekrispie got there before me. He might also like the Flavour Thesaurus.

Brilliant recommendations, thanks everyone. Jelly, which Angela hartnett book is that? I really fancy lateral cooking for myself! I have the flavour thesaurus and he quite likes experimenting with it, so the lateral cooking one could complement it nicely.
