Gluten-Free Vegetarian TASTY recipes needed

Dh has invited some friends over - one of them needs gluten-free food (I have little idea about gluten-free except for that it is in flour and grains based things but not rice??)
Dh is veggie.

If anyone has any tasty recipes which will suit us all I will be very grateful (otherwise it may have to be a buffet )

Someone (apolgies as can;t remember who ) posted a yummy recipe for lentil moussaka recently.

Basically you make a tomato based sauce as you would if you making bolognese, except instead of mince you use green (puy) lentils.

It's probably in the food section with "moussaka" in the thread title.

I would do a big pan of that and serve with salad, and possibly rice if I was feeding v. hungry people

I think I have a lentil moussaka recipe in my veggie kids cook book.
I'll take a look - thanks frayed.

(I am nervous about accidently including something with gluten in and making the poor woman ill!)

A traditional roast dinner is a good one - as long as you're careful with the gravy - but Bisto instant gravy granules are gluten-free!

Kebabs with rice is another good meal - all meat and veg are fine (apart from sausages), so I like to do prawn kebabs with mushrooms, onions, red peppers etc. and have with rice.

Or steak and potatoes/rice.

Don't be worried about what to cook - just avoid pasta and instant sauces (or check the ingrediants) and you'll be fine!

Pudding's harder though - I tend to have ice cream or fruit salad (gets a bit boring! ) but most other things are out.

Oh - I've just seen the bit about it needing to be veggie!!

If your dh eats fish then you can still do the kebabs, but otherwise a lovely lentil/tomato sauce with rice would be fine.

As long as you don;t include any flour or cornflour, you should be fine, and check any stock you use is gluten free.

Aubergine
Potato
Greek yoghurt
Egg
Cheese

Avoid flour (wheat - cornflour is fine as long as it's made with corn - in some countries it can be made with wheat - which I find weird). Avoid malt vinegar, barley, oats to be safe (some eat them, some don't), rye.

Potatoes, cheese and eggs are always a safe bet. Some of your dh's veggie stuff is probably naturally gluten free - which would save you trying something new for a dinner party. I get a lot of frittata - which can be hot or cold, is usually veggie as well and is great with salad.

I am gluten free and never mind if there is bread for the able!

Thanks Dottydot - Dh doesn't eat fish either. I have tried suggesting that I do one veggie dish for him and the rest of us can have some sort of meat, veg, rice concoction but he looked a bit at that. (Not enough to offer to organise the menu though :O)

OK, so lentil moussaka is a possibility. I'm on the search for more, just in case

What about mushroom risotto? - If I use some sort of gluten-free stock cube? Is all rice ok?

I guess quorn probably not suitable?

Ooh yes - risotto's one of my favourite meals. You can get gluten-free stock cubes from any big supermarket or health food shops - we get Kalo ones. Yes, all rice is fine! All fruit, veg, dairy and rice is absolutely fine (which reminds me of my favourite dessert at the moment- Eton Mess - crushed up meringue, strawberries and double cream..!).

What about quinoa? Is that safe?

Am thinking of possibly using it to stuff peppers in a retro-way {wink}, maybe with goats cheese on top?

I would quite like an excuse to have roast potatoes (rare in this house) - I'm tempted by roast dinner stylee but need something solid in place of meat. (My usual nut roast recipe uses breadcrumbs so that's a non-starter).

Yes, quinoa's fine - I've got a packet in my cupboard but haven't been brave enough to try it yet..!

We also regularly have stuffed peppers - with rice and finely chopped mushrooms, onion, courgettes and cheese on top.

Dp is an ex-vegetarian - I turned her to the dark side...

You can get gluten-free bread sometimes from the bigger supermarkets if you wanted breadcrumbs for the nut roast - g-f bread would probably be ideal for this as it just breaks into crumbs at the drop of a hat anyway...

What about some sort of veggie curry (if I made the sauce myself and knew what was in it - not sure if they add flour to bought sauce as a thickener - some spices and coconut milk, veggies and serve with rice).

I'm on a roll now

Cornflour's OK by the way, as a thickener. Rice pudding - scrumptious! Some sauces are OK and labelling's so much better now it's much easier to see if there's any gluten/wheat flour in.

So nut roast and roast potatoes (drool) not off the menu entirely - hurrah.

It's looking like we may have to invite her to stay for a while just so I can try out the recipes

Quinoa's great Dottydot - give it a go.

I was also veggie once - but found lunchtime sandwiches of..cheese or umm..cheese..just too boring in the end.
Kids are veggie though so I am on the straight and narrow at home.

Meal is mid-september - so I can have a few practice attempts if needed.
Think final choice may depend on what happens with the weather - if we get some late summer heat or early autumn chilliness.

Fry a sliced onion in oil til soft; add 1 finely chopped garlic and 1 tsp grated ginger, then 1tsp turmeric and a red chilli, split and de-seeded. Add 1/3c red lentils and stir for a minute, then add 2c water, bring to boil, turn heat down and let cook for 10mins. Add 125g chopped green beans and if you like, 250g fresh prawns. Stir through 1/4c coconut milk, squeeze of lemon to taste, and either a generous pinch of salt or dollop of soy sauce. Serve over rice. Mmmmmmm.

Gluten free tortillas go dry immediately - okay for solo eating, but no good in a dinner party type situation.

Stuffed peppers with Quinoa are great - love the goats cheese idea. I would be thrilled if someone made me this. I however would roast a leg of lamb whilst I had the oven on. Good job my dh is not veggie!

Eton mess for a warm day, rice pudding for a cold. Yum.
