by the way were these the cheese muffins from the little blue book of muffin recipes (can't think of title now), because I make them and LOOOVE them........want some now.

V. expensive but less crap as not full of antibiotics, etc. Useful in emergencies. M&S do chicken breasts in breadcrumbs which are reasonably priced and my children (one v. fussy about eating meat) will eat them. Think Nigella does them in "How to Cook" and was v. quick (bung everything in food processor then stick in oven). Reasonably successful but texture a bit dense.

Enid - could you bind with egg rather than mayo (mayo-phobic family)? They sound great especially the addition of cheese.

What about ones that say 100% breast meat? (Birds Eye Chicken Dippers) are they ok?

prob could use egg but to be fair you dont taste the mayo, makes a nice soft binding for them. I highly recommend them, have posted recipe before and lots of people liked it

Birds Eye frozen chicken dippers are chicken breast, water, breadcrumbs, natural flavouring coated in water, sunflower oil, wheat flour, maize flour, maize starch, salt, lactose, breadcrumbs, baking powder.

Don't buy the fresh ones - even M&S have hydrogenated veg oil in them

Ignorant question here - how do you mince the chicken? Can you mince it in a food processor or do you need to use an old-fashioned mincer?

I might give those a go, once I too know how to mince (so to speak). Although will admit Inferiorettes get nuggets at their childminder from time to time

suedonim - you just have to but up a chicken breast and bung it in the food processor with some grated apple and an onion, and then anything esle you fancy putting in there.

Interesting about frozen nuggets over fresh! I have never ever, not once bought frozen meat! looks like I've been getting it all round the wrong way!!!

Thomcat - if you read the ingredients of fresh chicken nuggets (I've checked M&S and Tescos) they have all sorts of suff like preservatives and hydrogenated veg oil in them - the frozen stuff doesn't have either of them because they don't need to extend 'shelf life'

personally I would buy organic meat over convential means. But nuggets are fried and quite processed really. So why bother even buying them?

I am not a nugga-holic though!

Tescos fresh breaded mini fillets don't have hydrogenated oil in them.

well a complete failure on the home-made nuggets front tonight as far as ds1 was concerned (just ate carrots beans and potato). Ds2 however wolfed the lot and also had some of our chicken in tomato and basil sauce At least I'm a good parent to one child

Have to admit I buy Birdseye solely because they don't have the hydrogenated oil and because they tasted less salty than the Blue Parrot ones. The fishfingers and breaded cod are OK as well - in fact the latter are approved by the Observer!!! DS does eat normal food mostly (well, sometimes)....

My recipe (actually my brother's) is really really easy: dip small nugget size pieces of raw chicken breast in beaten egg and then in lightly seasoned crushed cornflakes (you can add some herbs and paprika if you want to make your own secret blend) then under a medium grill for about 10 mins or until done - makes very authentic nuggets with no nasties.

Enid's had a cheese and mayo and garlic addictive deliciousness about them. I'm thinking of adapting them to tinned salmon.

I've made Enid's nuggets, they are gorgeous, snaffled a few myself!

I tend to go for fish fingers as a standby in the freezer, DSs usually have them once a week, always choose the fillet version rather than the mince. If choosing chicken nuggets would probably go for M&S.
