Easy puddings including GF

I need to make some puddings/desserts for 10 people.

Does anyone have any easy suggestions?! I will probably make two things. One of them needs to be Gluten Free.

All ideas greatly received!

Hi, I've been GF due to coeliac since 2012 and have had lots of puddings. Ones I often make that can't be identified as gluten free (taste the same as gluten) are cheesecake (gf biscuits), Eton mess, rice pudding, pavlova. I'm sure many other will give some great ideas. Although gf sponge tastes lovely, it's hard to get it right the first few times and pastry can be hit or miss. Cheesecake is always a winner though.

DH is celiac. Lemon meringue pie with a biscuit base, cheesecake or pavlova are my go tos. Meringue is naturally gf so anything involving meringue is safe. Banoffee pie is another good one. Avoid pastry, it's a nightmare for getting right!!

I have a friend who is GF and also dairy and chocolate intolerant so desserts always a challenge!
She always appreciates any kind of cake but I've never been brave enough to try to make with GF flour.
www.nigella.com/recipes/clementine-cake this is fab (make sure you use GF baking powder), I serve this with caramelised oranges.

Slow cooker rice pudding. I use rice milk these days. Serve with rhubarb or plums.

Pav.

If it’s a cool evening, stewed apple with custard. Poached pear with chocolate sauce.

My go to for that number of people (in fact I took one to a party last night) is chocolate roulade - I adapt the Yule log recipe from the Nigella Christmas book, (leave out the icing). Gluten free as just eggs, sugar, vanilla extract and cocoa to make the sponge. When cool spread with raspberry jam and whipped cream, roll up, dust with icing sugar and serve with fresh raspberries and pouring cream.

Eton mess - variants can include using strawberries, or raspberries, grape and passionfruit, mango etc

Pears in red wine, or cider, or marsala

Poire belle helene -with chocolate sauce and vanilla icecream

Nigella chocolate olive oil cake- recipe uses ground almonds rather than flour so is GF. Is amazing served warm with cream or creme fraiche and raspberries

I read GF as Goady Fucker and was a bit Confused for a min

The coeliacs in my family always appreciate a gluten free cheesecake or trifle/tiramisu (buy a cheap supermarket gluten free Madeira and let it go stale).

You can also usually substitute gluten free flour into a normal STP recipe due to the moistness from the dates.

They get sick of meringue, chocolate brownie and rice pudding. Sorry

Chocolate roulade...dead easy and good to make in advance.
Melt 175g of dark choc with three tablespoons of water. Whisk 5 egg yolks with 175g caster sugar til thick, pale and creamy (about ten mins)
After the chocolate mixture has cooled down a bit, mix it in with the egg mixture til thoroughly combined. Whisk 5 egg whites until stiff, fold those into the mixture. Pour into a lined Swiss roll tin (15x9 inch) bake in preheated 180 degree oven for 15-20 mins until just firm.
Cover with sheet of greaseproof and a damp tea towel, leave until completely cold. Whip 450 ml double cream. Turn the roulade out onto a fresh sheet of greaseproof that's laid on top of a teatowel, dust it with icing sugar, then spread most of the cream on. Roll it up (it will crack, that's meant to happen) then decorate with remaining cream and some grated dark choc. Serve it with raspberries and optional pouring cream.

Crumble and custard

Baked nectarines and figs. Honestly, they are delish and can be done on a tray bake. Half the nectarines, quarter the figs and drizzle with some honey and ginger. Toast some hazelnuts and add mascarpone cream if you want. I've been eating this lots (mini honey and cream)
