What veggie dinners do your (young) kids eat?

I'm looking for inspiration for my 4 year old who is generally picky and a bit of a pain to cook for. I'm compiling a list of family meals he will actually eat with gusto rather than complaining and wondering what everyone else's small children will happily eat so I can add new stuff to try.

Me and DH are veggie. Kids omnivorous but generally eat veggie with us for dinner. I'll cook fish with them but as I don't eat it my recipe collection is nil! They like breaded white fillets so far but have rejected salmon.

Any lists of generally accepted meals/links to recipes received gratefully.

Oo handy thread, we're in the same boat having recently gone nearly veggie and have been struggling with a few things.

What I've done is plotted 7 meals as follows:

  1. Pasta
  2. Eggs
  3. Pot meal
  4. Beans
  5. Jacket potatoes
  6. Curry
  7. Meat / fish / veg

I've got a notebook on the go with a page dedicated to each 'meal type'. And a page at the ended titled, 'things the kids ate' 🤯

Here are some of our winners:

Build your own wraps - selection of fillings on offer from paprika heavy pulses (slow cooker), grated carrot, grated cheddar, an alternative cheese like mozerella or haloumi, avocado, brown rice.

Jacket potatoes with various toppings including the ones listed above, baked beans, tinned tuna, cream cheese, cabbage and creme fraiche, veg on the side.

Various pasta meals inc macaroni cheese, Crusty pasta and Broccoli bake (BBC good food), pesto and veg, but they still like just plain with butter best! 🤦🏻‍♀️

Curry's including chickpea curry eg coconut chickpea korma, I made a Malaysian style veg and coconut curry the other week that everyone loved, the recipe is online.

All day breakfast type meals / meets buddah bowls, with homemade Hash browns or rice, beans (posh or normal bb), spinach, avocado, tomatoes (they don't eat toms), poached eggs.

Freezer favourites are quorn chicken nuggets or dippers, cheese pizza that they can put extras on.

The theme seems to be things with a selection and build you own doesn't it!

Thanks, will definitely add some of these to our to try list. Been meaning to have a go at fish pie so that recipe is perfect.

@Indecisivelurcher I love that schedule of meals and may steal it! I have a similar mental list of 'things kids ate' I'm juggling.

Falafel! I make my own adding veg to chickpeas particularly favs are butternut squash or sweet potato.

For fish, have you tried tuna steaks? Or tuna, sweet potato and chilli fishcakes (just use tinned tuna).

Most of my suggestions are taken and then some. This is a great list.

I would add veg stir fry with noodles. You can experiment with soya sauce/garlic/ginger/lime in the sauce, rice/noodles, eggs fried in or not, and any combo of veggies wit or without tofu/quorn if he likes it.
