Easy chilled dessert for 12 that looks the part :)

I am having a few friends around for a relaxed dinner at the weekend.

I am doing Tempura prawns with sweet chilli sauce then lasagne with garlic flatbread and salad.

Can anyone suggest a good make ahead dessert please that isn't too costly but looks good. (I have 12 beautiful glass dishes to serve them)
Thanks for any suggestions

A no bake cheese cake. Not too many ingredients and delicious

Eton Mess! Always looks the part and relatively cheap

Buy large meringue cases / nests, whip then pipe double cream on top and add fresh berries. Looks great, tastes lovely, minimal effort.

Mary Berry mojito
Cheesecakes, so
Simple or lemon syallabub - Greek yogurt lemon curd and lemon juice, even simpler

Key lime pie

Tiramisu? Nigella has a good recipe

Roast peaches or nectarines, serve with a big bowl of creme fraiche, flaked almonds and smashed up crunchie bars to scatter.

This is the mutt's nuts.
www.nigella.com/recipes/ice-cream-cake.
It's extremely easy and can be made several days ahead, stored in the freezer.
(I serve it with a warm chocolate and peanut butter sauce. Also from Nigella. Recipe below.)
It's quite rich so you don't need huge portions.
I'd also serve a bowl of strawberries or raspberries with crème fraîche for ice cream unbelievers or anyone with nut allergies.

Chocolate peanut butter sauce.
375 ml double cream
200 grams chopped chocolate (half milk, half plain for me but your choice)
200 grams smooth peanut butter
6 tablespoons golden syrup.
Heat gently till ingredients are combined, serve warm.

Lemon posset, looks great set in a glass. Can make the day before, so easy to do. I always use James Martin's recipe.

If you wanted to ponce up the lemon posset it’s good with thin ginger biscuits.

writersbeenblocked · 15/08/2019 17:15

Came on here to say lemon posset as well - here's the recipe I used, very tart but very good! www.totallysacha.com/recipes/lemon-posset

White chocolate mousse, my most favourite thing ever.

Sundaychiller · 16/08/2019 06:22

Great ideas here thanks, torn between the choc mousse, Eton mess and possett although they all sound good.
The dishes are quite generous which do you think would be more suited?

Maybe Eton mess as there’s some fruit in there. I don’t think you need a lot of the other two.

Have you a pic of the nice glasses?Smile

Oven baked peaches or nectarines ,- just cut them in half, and wrap in foil with a little sugar. Then bung in the oven. Could always splash a little Cointreau on before serving with either really good vanilla ice cream or whipped cream.
