LUNCH INSPIRATION NEEDED!

I have just "sacked" nursery and now have DS1 at home with me all week.

I am used to him having a cooked lunch with pudding and coming home afterwards so I am now having to cater for him.

I can't give him sandwiches seven days a week and wonder if anyone has some easy lunches which are not quite so boring but aren't going to take too long to prepare? I work from home so don't have too much time to devote to this ( he has a proper cooked meal in the evening so it doesn't have to be mega nutritous!).

How old is he?
There isn't anything wrong with a sandwich everyday for lunch.You can vary the fillings.
My ds likes omelettes at the w/end but has sandwiches in the week. He is 3.

DS is 3 - I am worried he may get bored of them. Plus he will only eat cheese or cheese spread or ham if I'm lucky

Jacket potato with various fillings (tuna, beans etc). Easy enough to pop potato in the oven an hour before lunch and then just fill with whatever you have available

Beans/spaghetti on toast

Mini pitta pockets with various fillings, salad, cooked chicken, ham, tuna... whatever he likes

Various sandwiches are good too. Brown bread and variety of different meats and salad is great

Soup and bread/toast is always a favourite in our house too (make home made soups from whatever is in your cupboard, freeze in 'ds sized' containers, defrost in fridge overnight, and voila all ready when it comes to lunch time!)

Follow with various fruit, yoghurts etc and there you have it!

That's what my ds has. Cheese and pickle or chicken and pickle.
I don't let it bother me as he has a nutritious meal for dinner and we were brought up on similar.

cheese and beans on toast
toasted sandwich
half baked potato with various fillings
pasta with ham
pasta with tuna
rice with tuna
etc

Pasta always goes down well here- just grate over some cheese and add a few chopped cherry tomatoes, or a bit of tomato sauce (ice cube tray freexzing method LOL) and tuna mixed in

Thanks for the inspiration - he absolutely loves pasta but I had never thought of just adding cheese or ham.

Will give it a try!
