How do I freeze courgettes?

After the success of my veggie patch and in partiuclar my courgette plants, I have a lot of excess courgettes.

Do I slice them and just freeze in a bag - will they be OK?

Would they not go very mushy when you defrost them?

according to my cook book, blanch 1 min then freeze, aftter slicing.
defrost by plunging in boiling water for 3 minutes.
or thaw and fry n butter

I had lots of courgettes and I sliced them, blanched them for about a minute and then froze them in bags. But if you don't want them to stick together then you need to freeze them on a tray or something first before you put them in a bag. I did this with one batch and it worked ok. I don't think you need to blanch if you're going to be using them very soon, but if you want them to last a few months it's a good idea. Hope that helps!

Note to self for next year - DO NOT plant 6 courgette plants

Thanks will try the blanching thing. Will use them to add to bolognese type things so if they go mushy shouldn't matter to much!

Found this on the web - useful as I have a load as well..

How To Freeze Courgettes
Wash the courgettes and dry them with kitchen paper. Slice them to about 2.5cm (1 inch) thick - do not peel them. Prior to freezing, the courgettes should be cooked. Heat some olive oil in a pan and fry the sliced courgettes on a low heat until tender (about 5 minutes).

Place the cooked courgettes on a tray and allow them to cool. Pack them in a freezer bag separating usable portions with cling film. Place the labelled and dated bag in the freezer. They will keep for 3 months in a standard freezer.

I grate them and freeze them - then use grated courgette to make lemon courgette cake.

(You can make the cake and freeze it too, I think.)

I can dig up the recipe for you if you like?

I do another thing with grated courgette, that suzywong told me about on here, a pasta thing with mascarpone, grated courgette, lemon and pancetta. I think it'd work with frozen grated courgette, too.

OK today I have made the choc courgette cake and DD wolfed it down. The first veggies she has eaten for years....

Also the lemon and zucchini loaf - yet to be eaten but ir smelt good.

Tomorrow I am going to try Sarah Ravens courgette chutney.
