Work on our kitchen is due to start and while we won't have an oven or a proper kitchen for 6 weeks. So I'm on the hunt for any helpful recipes or ideas that are not beans on toast. Bonus point if I can feed it to a weaning baby and toddler.
I will have a microwave, slow cooker, single ring plug in hob (this may be a little useless) kettle and a toaster. (I will have a fridge freezer for the duration)

So far I've got

Spag Bol (in the slow cooker)
Beef strew (in the slow cooker)
Scrambled eggs on toast
Various salads

We're going through exactly the same right now! Only difference is I have a portable induction hob from IKEA - which only has one cooking zone, so hob cooking is definitely one pot only.

So far we've done chilli and bolognese, and this week steak with salad, plus some boiled asparagus and parmesan shavings (I used the microwave to keep the cooked asparagus warm while I cooked the steak). Today we had pan-fried pork fillet, with a creamy mushroom sauce and leeks fried with peppers and chilli. Again, I made the sauce and the veg first, and then reheated one while the pork was cooking, and then the other got a quick blast in the microwave while I was putting the other dishes on the table.

One thing that I've found is key is making sure you have a reasonable selection of plates and dishes to hand, and not packed away at the bottom of the box that you've carefully stored away!

Have you got a bbq, when we had out kitchen done, we cooked breakfast on it most days as well as yhe usual bbq stuff.

Ah. I thought we could bbq but hadn’t taken into account the fact that all a the building materials are currently being stored on our lawn - so no room for the barbecue!
