New potatoes glut

Has anyone got an unusual tried and tested recipe or 2 to use up new potatoes - apart from the boil and serve with butter, salads type recipes please?

Any ideas to incorporate some of them in soups?

I have about 4 medium sized bags (special offers picked up by DH as a "bargain") and they won't last much longer.. Thanks.

My sister makes something she calls German Potato salad (not sure whether it's actually German or not!): cooked and cooked new pots, with thinly sliced frankfurters and spring onions, in sour cream/Greek yoghurt mix.

Also, roasted new pots with truffle oil - amazing! I also find these freeze quite well for slicing into omelettes/frittatas, or throwing a couple into a veg soup to thicken up and add flavour.

Parboil for a few minutes and then transfer to roasting dish with thickly sliced red onion, garlic and lemon quarters. Drizzle with olive oil, season, and roast for 20-25 minutes. Great with fish, chicken or lamb.

Leek and potato soup? I'd halve or quarter them and then make as normal, I usually blend my l&p soup and add a dollop of cream at the end. Fry up with plenty butter along with the leeks to start, it's always delicious.

Boulangerie potatoes?
Cook in the oven. Slice and cover with full fat milk and vegetable stock. ( 50/50). You can add sliced onions too. And top with cheese.
