that is such a lovely book......& recipe is good
I prefer recipe's that dont use a white sauce base so not too claggy
Jamie Oliver's is very nice

Yes I could do with a good one of these. Mine are a bit hit and miss. They always benefit from some very finely (almost invisible) chopped onions in the sauce then baked with a wholemeal breadcrumb and cheesy topping.

Cornflour for the cheese sauce and some cream in there perhaps. Also olives, if it's not too contraversial, help to break up the stodginess.

I make a maccaroni bake with tuna, tinned tomatoes and sweetcorn spread on the bottom of the dish brfore covering with a generous layer of Maccaroni Cheese and baking in the oven. This came about when my dcs were requesting MC EVERY night! Had to do something a bit different

Mine has mild curry powder in the cheese sauce.

Make it as strong or mild as you like. I also finely chop a green or red pepper, saute it and mix that in too. And slices of a big beef tomato on the top.

Mix lots of butter and equal amount of whole wheat flour into a paste then gradually add milk to make a white sauce then add a bit of mustard powder, loads of grated cheddar cheese and some grated nutmeg!

jamie's

knob of butter
macaroni
oregano or marjoram
100g parmesan-grated
100g
fontina or taleggio-torn
100g
mascarpone
pinch nutmeg
small ball mozzerella

heat oven to 200
boil macaroni in salted water til al dente-drain & reserve a little cooking water
Heat butter in pan & when foaming add herbs & fry gently till crisp
Add pasta & reserved water & toss to coat & parmesan,fontina,mascarpone..toss till melted & gooey
Season & add nutmeg
Pour into oven proof dish,tear up mozzerella & scatter over with extra parmesan
Bake in oven for 10mins & finish under the grill till browned

I've done Jamie's version and somehow it came out really dry and rather naff.. Don't know what went wrong..usually absolutely love what he does!

Yes the curry gives it a nice kick - stops it from being too bland. I can't imagine it without now.

Dc are fine with it too if you use mild curry powder. The cheese and milk in the sauce still means it's creamy. Yum!
