Easy Lunches

Hi I'm a childminder and I try to do a hot/cooked lunch each day. I want to offer 6 or 7 different meals so that if a child only ever comes on a Monday they don't always have the same meal.

I have
Scrambled Egg
Baked Beans
Pasta & Cheese
Tomato Soup
H/M Veg Soup

I really need 2 more - can anyone help? I tend to stay Veggie and it needs to be manageable by quite young babies. (so no Pizza)

macaroni cheese

Have you tried eggy bread?

I know you've got scrambled egg on there but it's really easy to make and babies could eat this as finger food. I usually serve it with beans.

cheese on toast?

I cook all these big meals for my four kids, and then they go crazy with happiness when they get that instead!

lou33 · 15/09/2004 22:18

Yes mine also love eggy bread (and so do I!)

Skate · 15/09/2004 22:20

Ooh, cheese on toast - I'll try that one.

My kids are majorly picky eaters though so introducing anything new is a right nightmare!

Ha ha ha - nutritious this one - smiles and sausages!?!?! Mine live on it I'm ashamed to say!!

Hulababy · 15/09/2004 22:21

Quick Pizzas using a flour tortilla or an english muffin as the base. Add tomato and/or cheese as topping, plus anything else you fancy.

Pasta with Pesto

Toastie sandwiches

Chunky omelettes with fillings can be food finger food too.

lou33 · 15/09/2004 22:24

Two of mine like it with chopped ham on and the other two like it plain. I like it with finely chopped tomato, onion, dash of mustard ,mixed into grated cheese, and grilled (smile)

KatieMac · 15/09/2004 22:26

I like pasta with pesto - but quite a few of the other are too chunky for weaning we aren't on finger food yet.....Sausages would be my first choice but they're not veggie

I don't agree with veggie food looking like meat iyswim

I'm getting some great ideas for my fussy eaters!

KatieMac - you could vary your pasta dishes so use different pastas (sainsbury's do multicoloured pasta wheels which mine like) and different sauces - cheese, tomato, pesto.. then you could add in chicken or tuna and I also put spinach in with my tomato and tuna pasta as it's one of the few ways mine will eat veg!

dd used to love Annabel Karmel's Cherub's couscous - can't quite remember recipe - think it was just couscous in veg stock and peas. Easy to freeze. Or vegetarian risotto?

lou33 · 15/09/2004 22:28

Sorry about double post, pc played up.

Skate · 15/09/2004 22:28

Sorry KatieMac - forgot about the veggie part and I've harped on about chicken pasta too.

Skate · 15/09/2004 22:29

Lou33 - how bizarre - we posted on this just seconds apart but my PC played up at the same time saying the server was temporarily unavailable!

KatieMac · 15/09/2004 22:30
