Meat free Recipe ideas for dinner

Hi

We are a family of 4, dcs 6 and 4. We have meat based meals pretty much every evening. I would like to cut down on the amount of meat we are eating.

It's tricky though as I am low card so rarely eat potato, rice or pasta dishes. We do have fish regularly though.

Can I have some meat free recipe ideas please

Omelette or Frittata. Or eggs en cocotte.
Veg chop Suey / stir fry
Veg curry (cauliflower rice for you)
Goat cheese and beetroot salad.
Stuffed peppers
Roast peppers, courgette and onions sprinkled with feta?

Didn't realise how much I rely on carbs before this thread Blush

Any dish where the carbs are kept fairly separate.

Veggie ramen is nice, I just swerve the noodles. I do a very inauthentic version: fry up some onion, garlic, ginger, julienned carrots and peppers with sesame oil and five spice, then add lots of veggie stock, some eggs until they're hardboiled, some shredded greens at the end and the noodles. Pick the eggs out and halve them. Serve in bowls.

I do a beam chilli. Lots of different beans, onions, mushrooms, spinach, peppers and loads of garlic and chilli.

Replace the pasta with courgettes that you spiralise
Replace rice with cauliflower rice. Just chop it in a food processor

Chickpea and cauliflower curry with spinach
Shepherds pie with Quorn and or lentils and a topping of sweet potatoes or mashed cauliflower
Ratatouille with halloumi.
