do I need a mandolin to make dauphinoise potatoes?

Just slice as thin as possible and at least you will be able to serve it without the ends of fingers going in as an extra

Nigel Slater says to slice them about as thick as a £1 coin.

you can slice!!! Actually, if you use a mandolin, it can all get a bit mushy.

This recipes OK, but I slice the garlic finely rather than ponce about with a grater and it works too.

thanks - will slice - especially if Nigel says so.

Tried using the wide blade of the grater which was OK but I think slicing will be easier and being a veggie family, I don't think we want extra bits of fingers in it anyway

If you are runnig behind in furture and they are ready but you're not turn them down very low and they will keep another 1/2 hour or so.

I make them all the time without a mandolin- agree i think they go too slushy.
When Rick Stein made his he sliced them and put them in abowl with the cream mixture and mixed them around so the spuds were coated.
I started doing this and they never fail now.
Usually cover with foil for the first 1/2 hour and then let them go brown on top.
put a tray underneath in the oven as sometimes the cream mixture can boil over and drip.

A lethal finger slicing instrument of torture which gives you wafer thin slices of ptato,carrot,fingr or thumb if not careful.....bloody marvellous inventions but best used sober.
