Any good ideas of what to do with okra?

I'm trying to increase the amount and variety of fruit and veg that I'm eating and I've bought some okra. I've never eaten it before let alone cooked with it. Does anyone have any simple(ish) vegetarian recipes for cooking okra that they can recommend? Thanks.

in the southern US, the preferred way to cook okra is to slice it in rounds and batter it by dipping it in egg and then cornmeal (ground maize) and then fry (sauté) it in a little leftover bacon grease. adding onions and or/bacon, as per the first linked recipe, would probably improve it further.

however, I agree with previous posters that it is absolutely disgusting and I spent my childhood trying to avoid it, especially plain boiled - so slimy.

Try gumbo. Okra is used in gumbo recipes.

Thanks for the suggestions. In the end I just chopped it up and roasted it like this and had it as an accompanying veg - I didn't want to go to the bother of making a full recipe if I didn't like it.
It's quite nice actully, not at all slimy, not massively flavoursome so I think next time I will try a curry.

Definitely curry.

It is the only vegetable I'm not keen on. Definitely disguise!

My Punjabi friend told me it's important to cook it with something acidic to stop it going slimy. We add it to tomato-based curry.

I love okra, don't bin.
Okras are like tofu, you need to know how to prepare and dress them.

Wash them. Add 1 cm of water to a pan, a generous dash of extravirgin olive oil on top, medium high heat, add 1 or 2 garlic cloves, the okras and another generous dash of soy sauce. Let them absorb sauce and sauce evaporates, add another but of soy sauce and enjoy.

I have never had okra go slimy on me. It is a very versatile vegetable. I do a dishoom copycat thing and roast them with chaat masala.

It is used to thicken gumbo. I like it.
