Could I have your best scone recipe please?

As per the title!

I've got a huge tub of clotted cream so naturally I need lots of yummy scones to make cream teas 😁 the first few recipes on google are really different (like one needs 175ml milk the other needs a little milk) so I don't know which 1 to go for!

Would you be able to share your best scone recipe (preferably foolproof)?

Also, can I use raisins instead of sultanas or is that a big no no?

That recipe is foolproof. DH and I got competitive making scones one weekend I followed that recipe, he did another one, he admitted those were far better. Even since then we've only made those scones.

She adds sultanas in the tips so you could add fruit you liked.

Mary berry's. The key is to make the dough far wetter than you think and touch it as little as possible.

Rub 2oz butter into 8oz SR flour and add milk to form a dough, cook in hot oven until well browned.

Add sugar and dried fruit if wanted.

I use 900g SR flour, 100g caster and 200g butter with 4 tsp of baking powder. Rub butter into the dry mix and make a well and add 4 beaten eggs and a dash of milk. I use a knife to bring it together, flatten to 1" disc, cut out, glaze and bake 10 mins 220C.
Handle dough as little as possible!

Quarter fat to sr flour. Use sour milk or buttermilk if you have it, otherwise just milk, to mix. Add couple of spoons of sugar and dried fruit if you want, or cheese, herbs etc for savoury.
