Making your own nuggets and freezing

I want to make my own chicken nuggets to freeze, I do make my own and cook fresh but for when I’m short on time I’d like some in the freezer. Question is do I reheat in the oven from frozen or freeze them uncooked then cook from frozen, how long would I need to cook them for. Thanks

I cook them first then freeze and then cook them again from frozen for 25 mins at 180. Mine are quite chunky compared to shop bought ones.

Ok great thank you, do you need to wait for them to cook completely before putting them in the freezer the first time? I always get confused about that

I use chicken mini fillets, marinate them in buttermilk then "crumb" them and bake in the oven (just making sure I don't get them too crispy and over cooked) and freeze them so effectively I can cook from frozen to defrost and give them a final crisping without worrying they'd still be raw inside.

And I did the same with chicken tuna nuggets......my son who wouldn't eat fish didn't ever know the difference.

Mine are more strips than nuggets I suppose but buying the mini fillets means no chopping as they are the right size already, so quick and easy.

The buttermilk makes them really tender and you can add herbs/spices to it also (eg lemon and garlic, cayenne, tarragon and orange, lemon and lots of black pepper etc) if you want to make "grown up" versions which are lovely with a nice salad or in a posh sandwich.
