What to do with courgettes

Trying to include more vegetables in my diet, and have found that I like courgette.
Apart from roasting them, what else can I do with them? And nothing with egg as I'm allergic.

Wow! So many ideas to try!
Unfortunately I can't eat onions or garlic at the moment (flipping IBD! ) but I can improvise a little.
Tried grilling some on the George Forman grill, that was a massive fail! Think I need a new one.

I'm going to plant some seeds soon, and hopefully the slugs won't get at them again this year as we ended up with nothing last year.
