12 inch Square Victoria Sponge cake

I have seen 2 recipies for this the first being 12 oz's SR flour, Caster Sugar, Butter and 6 eggs
The second being 16ozs SR flour, Sugar. Butter and 8 eggs
What one would you recommend and what are the cooking times please
Can you add baking powder to these recipies

My recipe for a 10" square uses 8 eggs and 550g (1 1\4 lbs) self-raising flour, so I would think the larger quantity would work better. There's also a tbsp of baking powder in the recipe I use.

Self raising flour has the rising agent already in it. If you use plain flour you add baking powder as the rising agent.

Just check your self raising flour is in date and you'll be ok.

500g baking spread, 500g sugar, 500g SR flour 6 eggs perfect every time 180 degrees 35 mins.

As long as the quantities are in proportion you can adjust them to the size of the tin. Eg

8oz flour
8oz butter
8oz sugar
4 eggs

Or 6,6,6,3 / 4,4,4,3 / 10,10,10,5 etc

12" square is a big cake.
