Help.. my curry is watery!

So I'm making a chicken curry in my slow cooker and it's still really watery. It doesn't seem to be getting any thicker Sad

I put it on high at about 4.30 and on the recipe it says 3-4 hours on this heat should be right.

What can I do to make it thicker? I'm to add coconut milk towards the end but I don't know if this would make it any better.

Please help!

Take it out the slow cooker and cook on the hob for the last twenty minutes or so with no lid and it should reduce down. What's the flavour like?

RhymingRabbit · 02/04/2019 19:20

I find anything in the slow cooker is too watery. I always at the very least have to ladle out excess water.

mcjx · 02/04/2019 19:30

@RhymingRabbit I was thinking of doing that actually, the flavour is good just so watery Sad

What rhyming rabbit said. Will definitely work.

You can also buy thickening granules at the supermarket.

I have some cornflour in the cupboard. I may add a bit of that too?

I just take the lid off and turn it to high about 30 minutes usually thickens it up by reducing it fairly quickly

Lokidokiartichoki · 02/04/2019 19:43

Got any smash? A few spoonfuls will thicken it up

What meat is it?

Either add corn flour or scoop meat out and reduce down

Coconut will thicken it a little but you can’t have it on a high heat or it may split

Next time do the teatowel trick. Wrap a teatowel around the lid so it absorbs the steam and doesn’t drip back into the food. It stops it becoming watery.

Next time use proper chicken from the butcher and not supermarket chicken that's pumped full of water to make it look appetising.
In the short term, add cornflower.

mcjx · 02/04/2019 19:59

@magicstar1 ooooh I will try that next time! Thanks

Hob with lid off on high, keep stirring should be ok in 10-15 mins

Coyoacan · 02/04/2019 20:49

Grated potato is a great thickener, though it might make it more bland.

My vegetable curry (cooked in stainless wok) was a bit watery today after I added spinach. I should have wilted and squeezed it separately before putting it in. I put a colander into a large bowl, tipped the curry into the colander and boiled down the strained liquid in a wide pan on the hob. Quick, concentrated flavour, and avoided overlooking the vegetables.
Slow cooker recipes work best with minimum liquid, but as pp says, cornflour or Bisto powder can save the day.

Curry was a disaster, it ended up in the bin. Added coconut milk as per recipe and it turned rancid!
