Inspiration for fish please

Hi all, I am doing a dinner party soon and one of the guests doesn't eat meat so I have decided to do fish for the main course, but I am a bit stuck as to what to do. There will be six people and I need something fairly simple as don;t want to spend too long in the kitchen.

For starter I am going to do Wild Mushroom Risotto, and dessert will probably be Summer Pudding.

Any help would be greatly appreciated

Take some cod fillets. Put a topping of breadcrumbs, cheese, mustard on top of each one.
Cook in oven for 20 mins

It will be quite dry though, so serve with 'wet' things - i loke roasted cherry tomatoes.

Smoked salmon pasta?

I mash 3 or 4 hard boiled eggs and mix with a pot of creme fraiche, fresh dill and chives. Warm through, serve on pasta (tagliatelle?) and top with smoked salmon, and parmesan if you like.

I have a recipe which I think I posted on that thread which is really easy - uses oranges

Bake cod in casserole dish with chopped tomatoes, mushrooms, black olives, garlic, basil.

Maybe a touch of cream as well and some parmesan cheese on top if you're not too worried about the cals.

Serve with wild rice/ jersey royals.

Fillets in herb crust. Get some fillets (salmon, white fish), 2-3 tablespoons of breadcrumbs per fillet. Chop up a load of herbs (dill, parsley, basil, chives - whatever you fancy), add to breadcrumbs, and grate in the zest of a lime or lemon. Add salt/pepper to taste. Add the juice of half the lime/lemon to the mixture. Brush fillets with oil and roll them around in the breadcrumb mixture. Fry over medium heat until cooked through.

Thanks for the other suggestions so far too, the salmon pasta sounds particularly nice but not for the DP as I am doing rice for a starter.

Salmon steaks. Brush tin foil with plenty of butter, wrap fish with it, with lots of dill, some lemon juice and black pepper. Bake for 15-20 mins. Open foil wraps. Yum.

I like mixed roasted veg, olives and cubed potatoes, finshed with a little stock and some anchovy so it's all caramalised and salty, then place some bass fillets over the top for a few minutes. Delicious, and looks pretty too

or salmon with a dill and mustard dressing and summer veg.

or trout with capers and bacon, oh vegi, something else salty then.

As a special favour here's my recipe again

For two people:

Peel and cut 300g carrots into thin matchstick strips. Put in a saucepan with a knob of butter, the zest and juice of one orange and 1/2 tsp ground coriander seeds. Add some water to just below the surface of the carrots and cook uncovered over a high heat until the liquid has evaporated and the carrots are tender. Season with salt and pepper and divide the carrots between two sheets of kitchen foil.

Place a fillet of fish on each pile of carrots and scatter with chopped spring onion, grated fresh ginger, chopped fresh coriander and finely chopped green chilli (optional). Put a couple of slices of fresh orange on top and a knob of butter. Fold over the foil and tightly roll the edges to make a parcel a la Jamie Oliver.

Put on a baking tray in a preheated oven (200) for 20-25 minutes.

We had this with new potatoes. But I think it would also be good with rice or couscous. It has quite a sweet taste because of the oranges but if you use the chilli it counteracts it so not too sickly. Btw I used Waitrose's Cooks Ingredients ready chopped ginger and chilli (ie out of a jar!) as I didn't have fresh and it was fine.

I made a very similar version of policywonk's herb crusted fish (I used cod) - although I have to say I just made it up, didn't realise it was an ack-choo-al recipe (!)....and it was yummy, and very very easy to do. I feel like a proper cook now :-)
