I'm baking a drip cake for my stepsister tomorrow and I need a chocolate ganache recipe to do the drips.

I've baked one the other week but I cheated and bought a chocolate glaze from Asda that you just had to microwave but I found the drips (and the chocolate itself) were too thick. I've attached some pictures of how it turned out.

So for this cake, I'm wanting to do it properly and make my own ganache so I will hopefully get a better drip!

I have looked online but I would rather get a tried and tested recipe off someone 😄

Small pot double cream, large bar bourneville, half an ounce of butter.

Heat gently in microwave bursts or over a double boiler, mix till shiny.

I pretty much use this recipe. Use very good chocolate. Be absolutely ready to go with everything else because it sets fast. And don't try and fiddle with it once it's on - just leave it to drip.

I actually love it more whipped as a filling

@OrchidInTheSun okay, thank you. By 'good chocolate' do you mean branded chocolate such as galaxy/dairy milk instead of just cooking/baking chocolate?

I did put my previous one in the freezer to make sure it was cool and chilled before doing the drips on my other cake but I think the chocolate just needed to be runnier

Grin forgot to say what I use- equal amounts of dark 80% chocolate and cream www.bbcgoodfood.com/glossary/ganache

I use Menier generally. I don't touch Cadbury's since the Kraft takeover - their chocolate is awful now

@OrchidInTheSun thank you. I'll be going to Tesco tomorrow morning for my ingredients.. I'll have to see if they sell that brand of chocolate.

Is it best to use dark chocolate rather than milk?

You can dribble a ganache like that, and it will taste FAR nicer than anything you buy ready made. Buttercream the cake then chill it and have the choc cool.

Ok, ganache is really just cream and chocolate, and when people say good chocolate, they mean like Lindt/green&blacks top shelf chocolate. DO NOT use Cadbury/Galaxy these types are known as a 'chocolate blend' they don't contain as much 'chocolate' as you think, they're packed fulll of other ingredients. This is why a dark good choc is best for ganache.
Whatever quantity/ratio you use, try and 'just' melt the choc and when you add the cream, stir,stir, stir like your life depends on it, put the mix in a piping bag and let it sit for 10 mins, should still be soft after the 10 mins. (That means you've done it right) and pipe on your drips, and let it all set.
That's the method we use in the bakery, but there are loads of different ways people have come up with, find a method you like and give it a go.
And your original cakes look really good, maybe a little longer in the micro.
Drips are fun, they don't need to be 'perfect' remember that 😊 and good luck 🤞🏻🍰xx

Personally I really wouldn’t say “no” to either one....but there’s a reason I have the physique I do.Grin. You could do exactly the same with a couple of hundred grams of mars bar. The poshest is dark choc and cream. The easiest to handle in my experience is bourneville. Harder (more expensive) higher Choc content green and black work but I think make it more dribbly and sometimes too Berry-chocolate flavoured rather than chocky flavoured.

I did that with a joint of pork once. It was not really salvageable but we had nothing else for lunch 😂
