lemon sole

coat in flour

fry lightly

have with savoury rice - rice, peppers, mushrooms, spring onions, whatever you desire

chicken and brocolli pasta bake

cooked chicken, cooked brocolli and cooked pasta chucked in an oven dish and coated in cheese sauce (with added cayenne pepper if you like) - in oven for 20 mins

or just a really yum stirfry
my fave atm:

chop up red peppers (those romano ones much nicer than usual), mushrooms, spring onions, pak choi, add mange tout and a tin of water chestnuts.

fry up some skinned duck breast in strips, add some pine nuts towards the end. Stir fry the veggies then bung them in with your fave stir fry sauce or make one out of usual stuff

Grilled salmon/chicken/lamb chops with jersey royals and veg or salad

Grill a pork chop with grated cheese and sliced tomato on top.

anyway

Courgettes, sliced
Mushrooms, sliced
Spinach (if you fancy)
Onion, cut up
Garlic
tinned toms

Fry onion and garlic till soft, throw on some paprika, then courgettes and mushrooms, cook for a few mins and then throw on tinned toms.and cook for few more mins. Throw on spinach at last min and serve with pasta.

Ooh Cod I'm gonna try that sardsine and spaghetti one. Sounds good and easy.

LOl at instead of garlic crusher smash a clove with something heavy. My dh berates me every time he sees me getting out my crusher. He never uses it.

EnidJane - if you have a husband like mine who refuses to eat a meal without meat ? ignore this ? otherwise, I like this. We called it Potsy Pans when I was little don?t know why. It is basically, boiled carrots and potatoes mashed together with some fried (only until soft) onion and then mixed through with a basic cheese sauce. Put it in an oven proof dish, sprinkle with cheese and bake for 20-30 mins at about 180. Cheap and homey

Salmon fillets.....(can also do this with cod or pink trout).

Take two salmon fillets and place each one on lightly oiled piece of greaseproof paper.

Chop into tiny cubes:
one small peeled carrot
Half small courgette
slither of red pepper
one small green pepper
Chopped green chives/dill/parsley or any fresh herbs you have

mix all the above with tablespoon or two of creme fraiche.

Pour tablespoon of white wine over the fillets (not too much or will slop everywhere). Spoon cf/veg mixture on top. Grind over some black pepper or chuck on a few pink peppercorns. Top with a thin slice of lemon.

Fold over paper to make baggy parcel - make sure all four sides are folded over so does not lose too much steam and flavour.

Cook at 180° for about 10/15 mins depending on how thick your salmon steaks are. Serve up on plates still folded in parcel.

Serve with wild rice or buttered, parsleyed tagliatelle. Yum with dry white wine or glass of non sweet rosé.
