Picky eater!!

Hi All,

I'm trying to eat a bit more healthy and make changes to both mine and DP's diet and i would like to do things like stuffed peppers, bean casserole etc. However in this respect DP is very picky with what he will and won't eat. He doesn't like cous cous, rice, a lot of veg and isnt a big fan of chicken or fish!! I on the other hand am like a human hoover and will eat most things.

Other than making two different meals does anyone have any ideas that fits into the healthy eating category that doesn't involve the things mentioned Confused i know, tall order! Blush

Homemade pizza where you make the dough yourself...top with tonnes of veg and a little cheese.

Curry served with potatoes (roasted are nice) instead of rice.

I do the majority of the cooking, mainly because i take less time and make less mess.

But i'm trying to do this for myself too so its not a case of just trying to pander to his needs and wants either. It would be helpful to kill two birds with one stone though hence why i asked.

Can you say which veg he will eat? All my healthy recipes centre around chicken, fish and veg!

Yes sorry AtleastitsnotMonday probably would have been a good idea to do that initially!

Strangely enough he will eat any kind of stir fry regardless of whats in it Confused but i suppose you cant live off that haha.

He likes parsnips, Brussels sprouts, mushrooms & cabbage, will grudgingly eat broccoli, sweetcorn, potatoes (but don't want to get too carb heavy) and the odd green bean. When i say grudgingly if its on the plate he will eat a mouthful or two but that's it so its more of a waste than anything. Things like courgette, peppers and cauliflower are a no go Sad

I do realise that its a bit limiting so if it comes to making something and then having different sides then so be it but wanted to see if people had a suggestion for a happy medium Smile

What about sweet potato, butternut squash, peas and carrots? Will he eat things in a tomato based sauce?

the veggies you mentioned would be lovely roasted with some onion garlic.you can then serve with any meat or fish.

could you stuff you peppers with pearl barley or bulgar or buckwheat
or what about little pasta like orzo to stuff them with

sweet potato an veggie curries
could you have egg or noddles where it calls for rice.

I have a super picky DS who won't eat any vegetables at all. I am vegan (none of the DCs of my DH are) so it can feel like I cook a multitude of wasted meals.

I try and make things like fajhitas where everyone puts together their own. DS is more likely to try things if it is his choice and we can all make whatever suits us.

When I make a stir fry I serve the noodles, veggies, tofu and meat in separate bowls and we all put together what we want.

AtleastitsnotMonday He will eat sweet potato, he has had butternut squash but not on its own it was always in something. I cant remember if he actually ate it though Hmm peas and carrots only if its in something if it was just on the plate then no. He will eat tomato based thing though yes Smile

Thanks for the suggestions kateandme i could give the peppers a go with other things, i had thought of orzo but i'm not sure if he would just say it was too much like rice Hmm. To be fair he doesn't just dismiss stuff he will try things first, its just my success rate isn't very high! Grin

He is a noodle fan so that could be a good alternative! Thanks for the links, they look delicious especially the parsnip shepherds pies Grin. I looked up cabbage steaks, never heard of them before but they look nice and i'm fairly sure he would eat it!

Spiderbanana do you find there's less food waste serving up separate bowls of things then?
