I know im probably asking the impossible... but here goes!

I have a rather demanding 7 month old and never get time to make myself anything to eat during th day so end up grabbing biccies etc.
Does anyone have VERY quick, easy recipes for lunch that are quite healthy, and dont have cheese (I hate the stuff!)

Bagal, sandwiches, rolls are very quick and just have different fillings. Scrambled eggs, ommlettes, boiled eggs etc.

Tomato soup,
fry onion and garlic add some red lentils, fry add 2tins tomatoes and half pint chicken/veg stock, simmer for 20mins and blend if you dont want it chunky I know a bit fathy, I have with big dollop of creme fraiche and cheese on top but obviously skip the cheese

get pita or tortilla wraps (wholemeal better)

fill with:

  • sardines or tuna or mackerel/spring onion/salad/tomato

  • hummus and shredded carrot/cucumber/any veg you like

  • scrambled eggs with anything you like thrown in

  • chiken breast/tomato/avocado

-roast beef/sunblushed tomato or chutney

  • leftover bolognaise/chili/ any meat (put under grill to heat

couscous salad:

Pour boiling water over couscous according to instructions. Let it rest 5 minutes to rehydrate.

In the meantine prepare one two mixes:

  1. 1 orange & 1 beetroot,chopped/ pine nuts and coriander

  2. 1 tomato, 1 small onion 1 chunk cucumber or celery, chopped and parsley

toss either mixture with lemon juice, olive oil, salt and pepper

make up your lunch the night before when DC in bed, or if you get DC has a morning nap, you can do it then. Put it in the fridge. Then you can just grab it and eat/heat if necessary. Stating the bleeding obvious, but took me a few months to catch on to that one and what a difference it made to quality of lunch-time meals!

oh how I remember thoise days!

I ate a lot of covent garden soup, boiled egg and toast, wholemeal spagetti with butter and salt. Not that healthy but a mela at least.

Are you bfing? Keep loads of healthy nibble stuff to hand - breadsticks, humous, dried fruit etc.

Eat load of fruit.
