Ideas for soft meals, please.

DH has trouble eating due to a tumour in his oesophagus and stomach and I'm running out of ideas for food he can eat. He's usually okay with fish and pasta. Chicken is sometimes okay. Cheese and eggs are okay but meat isn't. He can't eat pork, lamb or beef unless it's minced (and that can be a bit hit and miss too). Bread is out too. I guess I'm looking for ideas for fish or pasta dishes or maybe something vegetarian. I've had to drop at least half the recipes in my usual repertoire and we're getting a bit sick of rotating the ones that are left so any ideas would be appreciated.

Can he manage risotto or couscous maybe? Macaroni cheese
Pesto pasta
Fisherman's pie

Aw, your poor dh

Cheese and tomato dip (tomato soup with tinned chopped tomatoes added and cheese melted into it

Fish pie

Cheese and onion mash

Fish flaked up in honey/mustard sauce with mash

Couscous with fish/chicken and finely chopped vegetables mixed in

Sweet potato mashed up with red lentils and garlic and some tomato puree, with cheese on top

Risotto is a good idea. Never tried that. Macaroni cheese, though I might add bits of bacon as there's a limit to how many vegetarian meals he'll let me introduce into his diet! I do a couple of varieties of fish pie. What's your version?

I currently do pretty much any variety of fish, baked or pan-fried, or in pies or fishcakes.
Corned beef hash.
Cottage pie/shepherd's pie.
Lasagne
Pasta bolognese
Tuna pasta bake
Chicken & mushroom pasta
Tuna spaghetti rosti
Toad in the hole/sausage and mash/sausage casserole if he's having a good few days and thinks he can get sausages down.
Roasted sweet potoato & vegetables with halloumi

Those are the most frequent ones as they're quick. I might do something more time-consuming at weekends but those are the basic ones.

Greensleeves, I've never cooked with polenta. How would you do cheesy polenta?

lentil and/or bean stew
roasted veg like squash, pumpkin etc
finely minced meat to make a squishy lasagne
vegetable bake

I would boil the polenta with enough water to cover, adding more if it gets too thick, until it's all soft and the consistency of mashed potato/thick semolina, then stir in grated cheese (you could add veg/fish/chicken, or use stock instead of water). Then put in a casserole dish, top with cheese/dried basil and grill. But there are LOADS of ways to cook polenta.

Annabel Karmel has a great suash rissotto which I make for DD then season up for DP and myself. If you want the recipe I can post it later - need to find the book......

Some great ideas here. Thanks! It's a real nightmare cooking at the moment because DH is losing weight and I need to cook fattening things for him but I'm trying (and failing) to lose a stone so there needs to be some balance. I'm trying to go for healthy main courses but do puddings just for DH.

Scrambled eggs - made with butter and cream, if he needs to put weight on

Homemade, pureed vegetable soup - quite thick in texture, so it feels satisfying (but still smooth and easy to swallow)

Ooh yes, lovely thick warming soups - and add pearl barley to soups to make them thicker and more filling.

Soups - can be made with noodles, tofu, lentils, fish or chicken - for example cullen skink, miso and tofu soup, laksa

Cod with parsley sauce & mash

Poached salmon

Guacamole - ok that's not a meal but still good

Piperade - a reasonably sloppy egg dish

Stir-fry - with noodles

Baked potatoes with various fillings (I kike them scooped out and mashed up with cheese & ham and then grilled

Let me know if you want recipes for any of hte above. I've got more ideas but don't want to bombard you!

There is a nice dish that has hard boiled eggs in a cheese sauce with mashed potato on top. I can't remember what it's called though/

It's very very filling, all you have to do is pour a cheese sauce over halved hard boiled eggs, top with mash and oven it until brown. Nice with tinned tomatoes.

ooh yes, a vegetarian friend of mine made that for me when we are at uni and I loved it (inspite of otherwise being a total carnivore!)Thanks for reminding me of it EscapeFrom, my DCs will love this too
