ALMOND BUTTER COOKIES

1 c. butter, softened
1/2 c. white sugar
2 c. flour
1/4 tsp. salt
1 tsp. almond extract
iceing sugar to dip cookies in

Preheat oven to 350 degrees. Beat together butter and sugar until creamy in large bowl. Add flour, salt and almond extract, stir well. Chill dough for 1 hour. Remove from refrigerator. Pinch about 1 tablespoon of dough and roll in 1 inch ball. Flatten in crisscross pattern using fork dipped in sugar. alternatively roll dough out with a rolling pin and cut with cookie cutters.
Bake on ungreased cookie sheet at 350 degrees for 12 to 15 minutes. Remove while warm dip into iceing sugar. Cool.

made these at christmas with ds, he like them in any event. but I must admit mostly the cookie cutters are used on playdough

waitrose unit converter unit conversion

btw if you don't like almond you can use orange essence, or vanilla extract

We made some choc chip and orange ones on Wednesday using an Annabel Karmel recipe. There are none left...

Last week we made some shortbread ones. Can't remember if I used the Annabel recipe or the Delia one.
