Does anyone have a FOOLPROOF naan bread/flatbread recipe please?

Every one I've tried never really works. Made some this morning, trying to replicate a Dishoom bacon and egg naan. It was okayish, but a bit hard and still not light and delicious like a naan from the local takeaway.

Can anyone help me please? Happy to put in a bit of effort and time, don't just need a simple recipe, but one which will work.

Failing that, any kind of flatbread recipe. Thanks.

james morton has a great recipe that works everytime.
done in a griddle pan.

We do the Jamie Oliver one. Can’t remember it exactly but it involves yoghurt

250g plain flour, 250g bread flour, 1tsp salt, 1 rounded tsp fast action dried yeast. Mix. Add 1tbsp oil, mix with knife. Add 300ml tepid water, mix then knead for 3-4 minutes until smoothish. Turn dough in splash of oil, cover mixing bowl and rest for at least 1.5 hours. This amount will make 4 large naans/flatbreads. The dough freezes well. If using it all, divide into 4. Put on floured surface, cover loosely, let rise for 10-20 minutes. Roll into rough shape, cover loosely for 20 minutes, then stretch by hand - hold it at the edge and let weight of dough stretch it for teardrop naan shape, or evenly for flatbread shape. Get dry frying pan very, very hot, then put dough in it. Cook for about 90 seconds then turn over and cook for another minute (roughly, depends on heat of pan etc.).

100% foolproof and simple. Equal amounts greek yogurt + SR flour. Mix and 2mins each side in a hot dry pan. Works great as a pizza base too

Is that equal by volume or by weight?

I'm currently addicted to The Good Food channel and a few times this week various chefs have said to use the best, most suitable flour you can afford as it does make a difference. In other words not Tesco basics.
