How to get pizza crispy

So I have a pizza stone and I do preheat it and I still can't really get my pizza crispy!

What am I doing wrong?

I usually use this recipe

I just got some pasta flour which a friend recommended. I'm going to try that today.
I am probably using a bit more mozzarella on some bits of the pizza as DS doesn't like it so his has just tomato and salami but his part isn't much crispier!

I only cook one pizza at once as if I cook more they are really soggy.

I use the bread baking setting. The fan setting is rubbish.

I roll out the dough with a rolling pin onto a silicone baking mat and then put the whole mat on the pizza stone. I don't have a pizza peel and I can't transfer it otherwise.

Right, next go will be cooked for longer and I'll try reducing some passata.
Why does nobody sell sauce the right consistency?

OP I find that you can't get pizza dough thin enough just by rolling it out. Have you tried stretching it with your hands? This will make a big difference

  • semolina or polenta flour
  • very, very thin base!

I use sundried tomato paste as passata too wet. Cook for longer

Can you buy a pizza peel they're not expensive and would be worth it for crispy pizza

I just buy pizza sauce from ASDA

Transparent in places is fine. As long as you don’t get holes it is all good.

Much better - Morrison's pizza topper to the rescue. Plus a slightly higher temperature.
Next time I'll make the base bigger I think.

Glad to hear it OP! Was the pizza topper drier (I mean less wet) than the passata that you usually use?

I haven't ever tried freezing "made"/ assembled pizzas, but you do know that you can freeze the dough? I freeze it straight after it's had it's first prove. Makes pizza night much less stressful if you can just get the dough out of the freezer

I have done that but I'm hoping to assemble two so DH can stop moaning that home made is too much bother.
