I'm 38 with a family about to become 6. I think it's time I learnt how to make pancakes, it must almost be pancake day.
I've tried every year and so has my partner but we haven't yet made even one decent one.
I want to impress with pancake prowess this year.
Any tips?

I disagree with a hot hot pan. medium heat makes more even pancakes ime

OP, don't forget to get the extra's for toppings. I just guesstimate mix if doing just one for myself, but yes as pp just said consistency of single cream. Well yes pp. re. Waste. There's bound to be someone who wants a second helping! I used to be that person but appetite has dwindled, weight has not though 😡 😡 Has anyone tried those ready mix? No good for many people. I've not - just wondered what they are like.

We never measure...
Break two eggs , glug of milk ..mix together...

Add about four spoonfuls of flour, mix your batter...
Should be like single cream .
Add more of milk or flour till it hits that thickness
Heat the pan with a bit of oil... Really hot..
Drop a spoonful in. If it starts too cook add more a circle about the size of a cup, tip your pan so the mix covers the pan...
Leave it alone, till the bubbles have come up and it stops looking wet, the turn or flip it
Cook to golden brown, about extra min. Serve
If you think pancake is too thick add bit more milk to batter.

Some cookers are hotter, so yes turn down is necessary.
But when really hot it takes less than 75 second to cook. The not touching till the top looks dry is so important.

I have never used ready mix.
seems silly. to buy a bottle of flour toadd an egg and milk to.

If you have pre uni children, show them how to make pancakes.
My children knew and ended up doing a midnight batch the second week of term, four pans on the go and twenty students all scoffing them...

Delia's recipe is bomb proof.

Clarified butter so it doesn't burn, medium hot pan (just before the butter beads and way before smoking temperature). I just have a normal pan - non stick tend to be too thin and heat unevenly leading to burning or uncooked bits.

I make scotch pancakes so not the thin crepes you want but recipe is foolproof if you want to try. 100g flour, 50g sugar, one egg and enough milk to loosen mixture. It's quite a thick batter. Pan needs to be smoking hot and well oiled. Works every time.

If you make too much batter it's fine. You can use the rest for breakfast.

pancakes freeze well.
and are great for lunchboxes instead of bread.
