Dairy free baking - limited substitutes

Hi,

I'd like to take some dairy and soy free nibbles to a party for someone who can never eat at these events.

I'm not In the UK, and I have no access to dairy free butter. I might not be able to get a milk substitute, and am not prepared to make a nut milk.

Any suggestions for naturally dairy free recipes? I've seen oil cakes, coconut macaroons. The outside of a macaron would be dairy free, what could I fill it with? Meringues also sprang to mind.

Anything else people can suggest? Thank you.

I second the nigella chocolate olive oil cake. I make it with half flour, half almonds to make it a bit less dense. Is always really well received!

Funny, Artesia, I make it just with almonds (gluten, as well as dairy intolerant DD). Everyone always says how light it is! I don't find it dense at all. I do slightly up the amount of cocoa, and whisk the bejesus out of the eggs, maybe that does it? It's delicious, anyway!!

Liking the look of the orange cake. Will see if I can get ground almonds today.
Otherwise, egg and dairy free chocolate cake looks like available ingredients!

Dairy free pastry - use Vitalite (or a generic version) or Trex and Vitalite or even some lard for some of the fat and make as you would normally.

Or buy ready made! The regular Jus-Rol you can get in any supermarket is dairy free (except the all butter puff pastry) and is brilliant. Apparently even Delia Smith uses it rather than making her own!

Thanks fudge and Artestia, but none of those are available here. Even finding margarine is tough.
My pastry just says "margarine" on it. I'm guessing it might not be safe? I'll take jam tarts off the list.
Found ground almonds in supermarket no 2, so orange cake is on.

I guess I'm thinking sweet, because that's what I'd take normally! Nothing stopping savoury, which I guess would open up more options, but sweet would be my preference.

How do you make coconut icing? Recipes online seem to suggest using butter, or adding tapioca starch, and stevia and other such unobtainables.... I dont live in a great place for shopping for more exotic food items!

Sorry just saw your question. Here you can buy Jus Rol pastry which is dairy free - I forgot the non-UK bit just then!

Otherwise I guess you’d need dairy free spread. But I am lazy and I cheat with the Jus Rol Smile

@DrDiva - I have made that very orange cake before and it's gorgeous. Thanks for the reminder of its existence! Recipe sounds weird but go with it!
