Fluffy dumplings?

Tried again last night, again unsuccessfully, to make big fluffy dumplings that I remember so fondly from my childhood. Followed the recipe on the Atora packet - 50g suet, 100g SR flour, a pinch of salt and water to bind. Simmered on top of the stew for 20 minutes and while they were tasty, they weren't the big clouds that my mother used to make!

Any suggestions?

To be honest, I get the ready mixed packet. I add mixed herbs & onion powder for extra taste. They're lovely.

Mine are never fluffy when done in the oven, much better on the hob. Tight fitting lid and don't peep until timer beeps

I get fluffy ones on the hob, but I've never tried them in the oven.

Even with self raising flour, I always add a bit of baking powder too. Not too much, just a half tsp or so.

And yes to resisting a peek early.

Now I want stew and dough balls for tea....

I save some gravy from the stew and microwave mine. It works every time. I also add baking powder and don't add too much water.

Add an egg. That was my Nans trick and they always come out amazing and fluffy. Don't handle them too much either.
