Cake without sugar

DD has decided to give up sugar in all its processed forms for January, including honey, agave syrup, date syrup, maple syrup etc. Essentially her only sweet fix is fruit.

She is desperate for a cake and wants to make something entirely sugar & artificial sweetener free.

Can this be done? Does anyone have a recipe that she could try, please?

I think it's part of its character! Could you make fruit scones with sultanas and cinnamon. A little chopped peel might add interest.

I make a banana bread that has abut 7 bananas in it. The recipe calls for sugar but I'm sure you could make it without.

I often reduce the amount of sugar in a recipe, e.g. if it asks for 200g I'd use 100g and haven't had any complaints from the dc.

I make coconut milk scones, and the flavour is quite sweet on its own (I tried making savoury ones with no sugar and it was way too sweet!) If you added sultanas or dried apricots, they'd be cake-like. This recipe works, just leave out the sugar:

It doesn't entirely make sense to have cake if you're trying to go sugar-free though - part of the point is surely to retrain your taste buds a bit, plus fruit sugar is still sugar! You could try to get her into savoury baking instead, cheese scones etc?

Have you tried the Davina McCall recipe books/ website, OP? She does a lot of sugar free things (although does use honey, etc). Might be useful if your DD is still cutting out sugar but will now accept substitutes Grin

I'm trying to find low/ no sugar recipes for baking too as DP is pre-diabetic, but we have small DC with lots of energy, and when we take them out for the day it's really hard to find healthy snacks! Meals aren't too bad as there's usually a soup/ jacket potato/ salad option, but snacks are often cakes/ brownies/ flapjack etc. If I could make more of my own that would be really handy!

There are some cake recipes without sugar in the baby led weaning cook book. You might be able to get the book cheap 2nd hand (realise your DD is older!).

My version of Bara Brith. Soak a packet of mixed fruit in enough tea to cover overnight. Add flour and mixed spice to make cake dough consistency. Put in loaf tin and cook. Wrap tightly in foil while still hot and leave until cold. No sugar or eggs or dairy and really nice.

Have a look at the Blood Sugar Diet book. But be prepared to learn that pre/diabetics should be avoiding/minimising all sugars including starches. So no jacket potatoes, oats or flour based products.

Have you tried date sugar? Its basically dates ground really really small en.wikipedia.org/wiki/Date_sugar

you can buy it at health food shops, and I think waitrose does a syrup version. Its just fruit so no added sugar.

You can use applesauce instead of sugar
