not cooked the flour mixture enough before adding the milk??

no idea really

MarsLady · 28/06/2007 17:29

ditto trinity.... you need to make sure the flour and butter are properly cooked!

MrsCarrot · 28/06/2007 17:31

yes, you need to be rough wth your roux

jellyjelly · 28/06/2007 17:31

Butter, i never put that in shoudl you?

I did put the milk in first then the flour. Is that why?

Will it go?

Cook it for a bit longer and then blend it with a hand blender and it will be fine.

jellyjelly · 28/06/2007 17:32

What else can i add to the mix. What sort of other sauces start with a roux?

slayerette · 28/06/2007 17:33

Melt the butter, then stir in the flour and cook gently before adding any milk. Add the milk a little at a time and make sure that it's fully blended and lump-free before adding the next dollop of milk. It's a real labour of love!

MaureenMLove · 28/06/2007 17:39

I always throw everything in the pan together and mix it with a whisk (continuously) until its all come together. It never, ever goes lumpy.

MarsLady · 28/06/2007 17:39

Moi aussi Maureen!

ELR · 28/06/2007 17:41

if you use low fat cheese it can be grainy

MaureenMLove · 28/06/2007 17:42

I put chopped onions, really small, into the mix at the start too. Its good with roast beef!

Whizzz · 28/06/2007 17:47

Stir the flour into the milk first - make sure its all mixed & not stuck on bottom of pan - then add the butter. Heat with continuous stirring until it goes thick, take off the heat then add grated cheese - the heat of the sauce will melt the cheese

amidaiwish · 28/06/2007 18:40

i do the same way as slayerette
also use gruyere cheese instead of cheddar. so much nicer.

jellyjelly · 28/06/2007 18:59

Have a huge block of cheddar. What else starts with a roux?

MrsCarrot · 28/06/2007 19:43

MrsCarrot · 28/06/2007 19:44
