how do i make chicken soup from a chicken??

sounds like a stupid question, but i was wondering how to make a (yummy) chicken soup with the leftovers from a roast chicken????

MintyDixCharrington, I always wondered what to call my Braun "whizz it thing" in English. In German it's a 'Pureeing Stick' which is wrong on so many levels - and now I know. Thank you

One more stupid question from me {but then I once got food poisoning from chicken soup and still shudder at the memory. Uuugggghhhh!) Should you boil the carcass whilst it is still warm, or is it OK to let it go cold first then use it?

oh, i do from cold, next day usually (in fridge overnight), but then again, i use battery chickens and have been known to eat out of date yoghurt quite frequently

jamie's thai chicken stock

chop;

  • 1onion
  • 6 cloves garlic
  • small ginger bulb
  • 2 stalks lemongrass
  • coriander stalks (keep leaves for garnishing)

put in large pas with 2 pints water and bring to the boil.
simer 30 minutes. Add 1 can coconut milk and simmer another 15 minutes.
strain
Add leftover chicken (shredded) & mushroom & baby sweetcorn simmer 10 mn.
season with fish sauce or simply salt.

Poour in bowls and garnish wiith
-chopped coriander leaves and spring onion and deseeded finely chopped chili if you can stomach it.

You can add pre-soaked rice noodles to make it a main meal

For a more substantial meal, make the soup as per the many suggestions here, add a soup/broth mix (buy from supermarket, includes lentils/split peas/barley etc) and then top with dumplings. My kids LOVE it

moroccan mother's chicken soup

-4 pints water

  • 4 chopped onion
  • 1 cup lentils (uncooked) or soup mix (as belore barley/lentils/etc...) and vermicelli
  • saffron ( half teaspoon) salt and peper

bring to the boil and simmer 35 minutes, add chicken leftovers and chopped coriander and cook further 10 minutes

this soup is typically served to nursing mothers and when you are recovering from the flu.

I don't agree about battery birds, sorry.
I do try to buy free range for health and ethical reasons, but seriously, a battery bird will make a lovely soup, too...

I bung whole chicken carcass (cooked, usually a day or two old) in a large saucepan with 4 cloves garlic, one large onion (quartered), 1 large leek (chopped roughly), 1 large carrot (same), herbs (lots of...fresh or dried - whatever you fancy), 2 bay leaves, salt & pepper. Cover with cold water, bring to boil and then simmer very gently for 2 hours.

Then skim scum off top, add chopped up new potatoes and parsnips and pieces of chicken salvaged from carcass, and simmer for a further one hour.

Then skim scum off again, remove bones and either serve as it is, or whizz in blend with a little bit of single cream and lots of black pepper.

Lovely jubbly.
