Just remembered a recipe my MIL gave me - I think it's called Cajun Salmon.
It needs marinating overnight (or even longer if you like), but otherwise is very easy.
You make a marinade of quite a lot of soy sauce (preferably low salt, as otherwise it makes the dish too salty) with a fair bit of ground cumin and ground coriander mixed in.
You can add in a little bit of other dried herbs and spices if you like - oregano, ginger, cinnamon, ground cloves, turmeric, mace, maybe some lemon juice or sesame oil - but you don't have to. The main thing is to marinate the salmon in soy sauce, cumin and coriander for a good long time and then cook it (covered tightly, or it will dry out) in the oven for about half an hour at about 180C.
You can use chicken thighs instead of salmon if you want a change.
I serve this with butternut squash and sweet potato. I am lazy so I get the packs which are already peeled and chopped, and then I put them in a roasting tray and mix them around with olive oil, salt, pepper and a bit of ground cumin and ground coriander. Then I roast them uncovered in the same oven as the salmon (they take a bit longer than the salmon, so I put them in 10 or 15 mins earlier).
This is very tasty and is one of my 10yo's favourite meals.
