We tend to eat a prawn stir fry most weeks & occasionally have fish pie or salmon but I’d really like to be a bit more adventurous and have a bigger repertoire of fish dishes.

Anyone care to share their favourite fishy supper? Smile

This is hardly a recipe as I'm not much of a cook, but it is easy and tasty and my kids like it too:

Sacla make a tomato and olive paste in little jars like pesto jars. It's called Intenso Pasta Sauce or something.

You can put some white fish (haddock, cod, cobbler or whatever) on a baking tray and spread this Sacla stuff quite thickly on top. One jar is plenty for 4 people. Then you bake it uncovered for about 30 mins at about 190C. That's it (apart from any potatoes/rice/veg you want to go with it).

MrsFL · 01/01/2019 14:58

Ooh, I know the jars you mean & that sounds tasty Smile

Thanks - I've just reread my post and realised it sounds really lame! But it genuinely is very tasty, much nicer than it sounds, especially if you like olives and tomatoes.

Plus it's fairly healthy and incredibly easy!

MrsFL · 01/01/2019 15:05

It’s exactly the sort of inspiration I need!

Haddock or cod frozen portions, defrost, cover in flour, eggwash, breadcrumbs, spray with oil. Into a hot pan turn over to crisp both sides. Turn heat down to cook through, 10 mins would do it depending on how thick your pieces are, or into the oven instead to finish off.
Very easy, bit messy but tastes lovely.
You can cut fish into goujons instead if you prefer.
Asda do frozen bags of haddock / cod and they are really lovely cooked like this, 2 bags for £5.00. Very good value as fush is expensive. Two bags easily does 5/6 people. I just whizz up breadcrumbs and freeze anytime i have stale bread.
Ive tried cooking from frozen fefore, same method but not as nice.
Never had a bone yet.

Lovely with homemade actifry chips.

Bit hopeless here but Rick Stein has a recipe, white fish, with a shallot, tomato and oddly vanilla sauce. I think he called it a recipe for people who don't like fish. Done it, damn nice, no link sorry. Then Scandinavian recipe, fish with strawberries, just type in that I reckon! Found it on a healthy eating site, also really good. Good luck!

indianbackground · 01/01/2019 15:26

Watching and definitely going to try C00lio’s recipe. I use the jar for pasta sauce so it will make a change.

Buy a pack of peri peri smoked mackerel. Sliced some potatoes into chunks and par boil. Drain and put in an oven proof dish, toss in some oil then cook in oven at 200 for about 20 mins. Then flake in the peri peri mackerel and a couple of chopped up tomatoes, grind in some chilli garlic salt. Cook for another 20 mins. Sprinkle on some grated cheese and cook for another 10 mins. Very tasty!

I really like Herring and it is very easy to do, just think of them as unsmoked kippers. www.deliaonline.com/recipes/main-ingredient/herring/fried-herrings-with-oatmeal-and-a-beetroot-relish

ikltownofboothlehem · 01/01/2019 15:34

Really quick & easy - white fish like cod, haddock or pollock, cook almost through then top with salsa and a slice of Mexicana chilli cheese. Put it back under the grill until the cheese is melted and bubbly. I serve it with baby new potatoes or a flavoured rice.

Stardustinmyeyes · 01/01/2019 15:38

I put Baby new potatoes in a roasting pan with some olive oil in the oven, after 25 mins add salmon fillets with a shake of garlic salt on the fillets then 15 mins later add baby tomatoes and asparagus and add some balsamic vinegar leave for another 10 minutes. Then eat.
Sorry I can't post a link. I ate this meal in a restaurant and tried it at home and I never weigh or measure anything. The oven temperature was about 180 in a fan oven

ShortandSweet96 · 01/01/2019 15:41

I love salmon, my mum bought me a salmon cook book for Christmas, at 22 years old I felt like an right boring old and, but I absolutely love it!
I often do either smoked salmon and broccoli quiche or pasta. The pasta is lovely!
Pan fried salmon with veggies and potatoes for a quick meal.

Or salmon fillets, with either lemon and will or teriyaki sauce on top, a small bunch if asparagus and a bunch of cherry vine tomatoes, wrapped in a foil parcel and popped in the oven for 15 mins. Absolutely gorgeous!

SilkenTofu · 01/01/2019 15:42

This is my DC's favourite fish dish.
Coconut cod

We also love [https://www.womanandhome.com/recipes/amelia-freer-s-poached-thai-salmon-with-pak-choi/ Thai Salmon]] but add glass or egg noodles into it at the end to package it out a bit more.

IMO the best/ nicest fish is to take a salmon steak and just pan fry it lightly in a bit of oil or spray until a bit pink in the middle. Have this with a salad or whatever. It is really tasty on its own, really healthy and takes a few mins.

SilkenTofu · 01/01/2019 15:42

Thai Salmon

Nacreous · 01/01/2019 15:43

I like salmon with a sauce made of creme fraiche, lemon juice, white wine and parmesan and maybe some basil. Eat either with potatoes etc, or as a pasta sauce. Yummy!

concretesieve · 01/01/2019 15:52

Not much of a cook and more of a summer meal but a nice piece of smoked mackerel, potato salad, salad leaves/tomato/cucumber. Delish.

mumsastudent · 01/01/2019 16:09

fish pie (cheat!) many supermarkets sell amix of 3 fish in packet in fresh food section ie smoked white fish, salmon, & white fish such as cod - place fish in deep oven proof dish with sliced onion & capsicum & either pea or sweet corn cover with low fat honey & mustard dressing sprinkle herbs on top place in oven with lid -whilst this is cooking cook potatoes & mash place mash potatoes on top of fish (you can add low fat cheese on top if you want) & let it cook

or cook mash potatoes & steam/bake any fresh fish - slice onions mix together add herbs or spices you like - shape into fish cakes & bake in oven on lightly greased tray can be served with sweet chilli sauce this can also be done with tinned salmon/tuna though you don't need to cook that first just mash it into potato onion mix & bake.

Chewbecca · 01/01/2019 16:17

A few we like are:

  • Sticky Salmon with Chinese Greens from BBC Good Food website
  • sea bass with puy lentils salsa from Delia's How to Cook (double or triple the lentil quantity though)
  • salmon with pesto topping from Delia's Winter collection
  • pasta with leeks, smoked salmon and cream
  • smoked cod or haddock with creme fraiche and spinach
  • Italian baked cod - with potatoes, tomatoes and olives

Just remembered a recipe my MIL gave me - I think it's called Cajun Salmon.

It needs marinating overnight (or even longer if you like), but otherwise is very easy.

You make a marinade of quite a lot of soy sauce (preferably low salt, as otherwise it makes the dish too salty) with a fair bit of ground cumin and ground coriander mixed in.

You can add in a little bit of other dried herbs and spices if you like - oregano, ginger, cinnamon, ground cloves, turmeric, mace, maybe some lemon juice or sesame oil - but you don't have to. The main thing is to marinate the salmon in soy sauce, cumin and coriander for a good long time and then cook it (covered tightly, or it will dry out) in the oven for about half an hour at about 180C.

You can use chicken thighs instead of salmon if you want a change.

I serve this with butternut squash and sweet potato. I am lazy so I get the packs which are already peeled and chopped, and then I put them in a roasting tray and mix them around with olive oil, salt, pepper and a bit of ground cumin and ground coriander. Then I roast them uncovered in the same oven as the salmon (they take a bit longer than the salmon, so I put them in 10 or 15 mins earlier).

This is very tasty and is one of my 10yo's favourite meals.

I’m loving all these suggestions thank you!

Mine aren't very keen on fish so I mostly have to make it taste unfishy. They will eat kedgeree with smoked mackerel; cod in a Mediterranean tomatoey stew with paprika, peppers and fennel and butterbeans; fish curries of various description; and salmon or tuna marinaded in something spicy.

I love simple pan fried trout or sea bass. I have to wait until we go out for dinner.

karmakameleon · 02/01/2019 18:45

Love some of the ideas here, definitely trying a few!

My contribution is crab linguine using tins of white and dark crab meat.

Boil pasta. While it’s cooking, sweat an onion in some olive oil with a little chopped red chilli. Add crab meat to the onion and warm through. Then add the cooked linguine and a sprinkling of parsley.

ArtyFartyQueen · 14/01/2019 17:39

@C00lio

I'm giving your recipe a try tonight with the family! DS has declared because it doesn't have batter, he's not keen but I hope I can win him round!
