Ideas please for New Year's Eve

It is our turn to host this year: 4 couples, each provide a course and a cheese. As we are hosting it is our turn for the main. I'm currently not feeling very inspired. No fish and no mushrooms are the requirements of my guests, not too heavy as we will be eating another 4 courses, and not too much of a faff/too much to do at the last minute are my requirements - I want to be enjoying the canapes and starters with my friends rather than worrying about what I need to do next in the kitchen. A casserole which goes with a tray of mixed roast root veg would be ideal. I'd like it to be a bit luxurious, as it is a treat meal, and will have a couple of days to source slightly more unusual ingredients. Any suggestions? Thanks.

Beef bourguignon with mashed potatoes or duchesse potatoes with green beans. Tasty but easy to make.

How about pot roast pheasant? A bit different from the usual and just needs mash and a veg to go with

Chicken in red wine cooked in a slow cooker then add some veg. Chicken breast, 1/2 bottle of red wine, seasonings, onion bacon lardons.

Another sc favorite of mine, ut it does have mushrooms so you would have to change it. Chicken breasts, condensed mushroom soup, creme fraiche sliced mushrooms and leek. for 4 couples I'd have a breast per person and a can of soup and a pot of creme fraiche per couple, maybe less. I sometimes serve as is or it can be the base of a pot pie.

I've done veg where it is tied in a bundle so a baton of carrot, a sprig of sprouting broccoli, a baton of parsnip a green bean - tie them into a bunch with a layer of spring onion, it's just veg but looks posh. Put in a steamer for 15 mins.

Baby jacket potatoes, rub them with seasoned oil and stick in the oven for 30 mins.

If you can get it easily, wild boar or ostrich casserole in red wine are more unusual options. If cooking boar I put a little dark chocolate (90%) grated into the sauce plus a tiny pinch of chili flakes.
I would serve either creamed potato and celeriac or gratin of potato and celeriac, a green vegetable and/or red cabbage.
You could also do thyme dumplings instead of potato.

@Ricekrispie22 I made the Persian Lamb last night, it was lovely, the 10 of us really enjoyed it. Thank you for the suggestion. :)
