Beef for Christmas Day anyone?

I’d prefer turkey personally, mainly because of all the trimmings, but I’ve been outvoted and we’re having beef.
If anyone else is planning beef, what will you serve with it?
I’ll be doing the usual vegetable accompaniments (roasties, sprouts, roast parsnips and carrots) and gravy, of course, but what else’s could go with it? I’m thinking something pickled maybe?

Red cabbage goes so well with beef. And cauli cheese! Especially with horseradish in the cheese sauce mmmmm

Lunaballoon · 17/12/2018 20:05

Cauli cheese is a good idea. We’ll have a vegetarian with us so the rest of us can have whatever’s left Xmas Smile

Just do your usual trimmings. I often cooked lamb for Christmas dinner but still did everything else.

rosydreams · 17/12/2018 20:15

i am trying to get my family to eat more veg i never made Cauli cheese is it popular

Lunaballoon · 17/12/2018 20:17

Actually I don’t think anyone would complain about a few pigs in blankets on the side!

I did a beef Wellington last year with dauphinois potatoes and roasted vegetables.

bridgetosomewhere · 17/12/2018 20:22

We are having chicken and beef so doing all the usual trimmings plus cauliflower cheese and Yorkies.

I can't wait!

rosydreams · 17/12/2018 20:22

Lunaballoon · 17/12/2018 20:23

This year we're having beef wellington, dauphinois potatoes, Brussel sprouts, red cabbage honey carrots and parmesan parsnips.

Sexnotgender · 17/12/2018 20:29

Thank you, it was delicious. I made lemon tart for dessert.

This year is turkey crown as frankly I can’t be arsed making pastry at 37 weeks pregnant!

Laska2Meryls · 17/12/2018 20:29

We are having Venison (roasted with sage which is v like beef tbh.) . Red wine gravy , Roasties, tenderstem broccoli creamed leeks, red cabbage with pears and port (old Good Food recipe from way back) carrots with onion (DMs recipe) and sausage /apricot/ chestnut stuffing on the side.
We will be Stuffed!!

Laska2Meryls · 17/12/2018 20:30

.. unlikely to have a dessert .. there will be H/M Mince pies and cake later (if anyone can.)

allthegoodusernameshavegone · 17/12/2018 20:31

lol i purposefully cook to much so people can munch of leftovers for days and i dont have to cook

Lunaballoon · 17/12/2018 20:40

I’m loving the idea of beef wellington but don’t feel confident enough to do it without practice. Maybe next year.

I always do Barolo beef alongside our Xmas bird as our first Xmas together was in Italy so it's a kind of tradition now Xmas Smile

mathanxiety · 17/12/2018 20:44

We're having roast beef. I plan to do all the same trimmings that I did at Thanksgiving with the turkey, and I froze most of the stuffing from the turkey so we'll have that too.

Basically roast potatoes and parsnips, carrots, green beans, Brussels sprouts, gravy, and horseradish sauce instead of cranberry sauce. Plus sweet potatoes.

Kemer2018 · 17/12/2018 20:50

We're doing beef and turkey.
There will be tons left over which we'll slice and freeze in meal sized portions.

Lunaballoon · 17/12/2018 20:53

The consensus seems to be that a mixture of meats and trimmings is perfectly acceptable. I’m feeling a little less stressed now. Xmas Smile

We have beef and my mum cooks it over a bed of carrots with loads of balsamic vinegar over the top of the beef and carrots - the carrots then cook in the beef juices and vinegar and they go all sweet and gorgeous!

franke · 23/12/2018 11:51

I've done roast rib of beef a couple of times at Christmas. Has anybody mentioned Yorkshire puddings? Love them with beef - would make them once the beef was out resting.

mathanxiety · 24/12/2018 04:35

Well I went out shopping and came back with a fillet of beef so now they are all clamouring for Beef Wellington. I was hoping to sear it in my big cast iron pan and then finish it off in the oven. Damn you Gordon Ramsay.

SmokeGetsInYourEye · 24/12/2018 08:52

Love a roast rib of beef for Christmas day - you need lots of very crunchy roast potatoes and Yorkshire Puddings with a few sprouts and some gravy - simple and exceptional.

HowlsMovingBungalow · 24/12/2018 08:57

Red Cabbage
