SoupDragon · 01/09/2004 09:38

I used it in stroganoff when I didn't have any diced meat. Was very nice too!

LIttle mildly spiced meatballs slowly cooked in a fruity spicy stew "Tagine style" (onion, toms, carrot, stock, handful of apricots and slosh of orange juice, seasoning) serve with couscous or rice.

I do a lovely dish with lamb mince which is really quick to prepare and goes down a treat in my house.

Brown mince with some garlic and onions, put in casserole dish with some chopped carrots (or any other veg) Make up some gravy, add a lamb stock cube and put in oven for about 1 hour. Serve with mashed potato. Delicious.

Moroccan pasta: fry it with olive oil, garlic and onion, add some ground cumin and a little cinnamon, tomato paste, canned tomatoes, roughly chopped courgettes, salt and pepper, and a bit of fresh mint at the end, then add to bowl of pasta: delicious!!! and no need to add any cheese, so quite a healthy pasta recipe.

lamb burgers. You could put in some herbs (mint or rosemay) to make them a bit more exciting.

Mousaka (however you spell it) is yummy especially if you use ricotta mixed with a cheesey white sauce on top. Very simple to do, just cook lamb, onion, garlic, bit of thyme and oregano plus a bay leaf (splodge of wine if not for children!!) then make a white sauce using 315ml milk and 2 tablespns plain flour (no butter needed) once thickening stir in 25grams grated cheese take off heat and stir in 250 grms ricotta cheese and add a dash of nutmeg and cayenne pepper. Slice and slightly grill an aubergine (until a bit floppy and browny) then layer a lasagne dish (aubergine first) then mince etc then add all the cheese sauce on top and cook in over for 40 mins at 180. Alot easier than it sounds!!!

My DP does a fab lamb mince recipe - neither of us measure anything though - just chuck it all in a la Jamie Oliver - fry onions then add the mince and some mushrooms. When browned add as much as you like of ground cumin, coriander, garlic, cayenne / paprika, cinammon and cook out for a couple of minutes before adding chopped tomatoes and as much water as you need to make it lovely and sloppy ( like spag bol consistency). It's yummy yummy yummy with rice (basmati and loads of as we are greedy monsters). A bit morrocan but completely made up. Oooh, it's making me hungry ... Oh and a bit of salt and pepper too.

stuff a marrow with your favourite mince combination, especially tomatoey garlicky ones.

I second stripymouse's balls

Mix with half a minced onion, garlie, 2 slices of bread made in to crumbs, I egg, 1 Tbsp tomatoe puree, handfull of any fresh herbs salt and pepper. Form in to balls, brown in olive oil and butter, throw in a can of tomatoes plus a little water, cook for 20 minutes. Finish off with a little yogurt, a little sugar and extra seasoning (I uses dark soy sauce), stirred through the tomato sauce.
