Me and DD just made these and are pacing in the kitchen because they are still the oven.

I haven't cooked them for years and I thought it would be more complicated. DD actually made them herself.

Ooh, sponge cake... nice. I can't chuck you a meringue, they are fragile dontcha know. (and I don't share willingly!!).

Once I start I can't stop baking. Also made date and sultana flapjacks, for packed lunches this week (and for my morning coffee at work [grin)).

Also made home made burgers - fab.

All I've got is bloody banana cake and jam tarts (we had manky bananas and leftover pastry!)

flapjack recipe - from my bible - The Dairy Book of Home Cookery....

  1. 100g butter
  2. 75g golden syrup
  3. 75g soft brown sugar (I used 45g)
  4. 225g rolled oats (porridge oats)

Melt 1, 2 and 3 together (I use microwave but watch it doesn't boil)

Stir in the oats, plus however many chopped dates or sultanas or seeds or choc chips or apricots or whatever you want.

I use a foil-lined tin, press down quite firmly so it binds together keep it about an inch thick.

20-30 mins on 180.

Leave to cool.

Boil kettle, make coffee. Eat them all before the kids get home!
