Has anyone made any gluten free short crust pastry and can recommend a good recipe? I'm hoping to make mince pies and maybe a quiche- not sure yet. Has anyone tried frozen gluten free puff pastry? I'm completely clueless!

You can get frozen short crust and puff. It isn’t worth the hassle of trying to make your own.

You can buy it ready made in large supermarkets. (Waitrose, Sainsburys).

I've made my own gluten free pastry for mince pies using Doves farm flour. It was fine.

Agree, Doves farm is good, and they've got recipes on their website. Otherwise, the chilled shop bought shortcrust and puff pastry is good, a little better than the frozen IMO.

Buy some Dove's Farm gf flour, and follow the recipe on the packet. Gf pastry can't be kneaded like regular, is too crumbly and falls apart if you try. On the plus side, you can patch it up like playdough. And it needs a hotter oven. Blind baking helps it to retain its shape. Just give it a try, all you've got to lose is the price of some pastry. Gluten free pastry is a bastard - I've never managed to make it successfully and even the shop bought stuff is really hard to roll. My top tip is to grate it into your quiche/whatever tin and then squidge it into place with your fingers.

I use doves farm plain flour too. 200g flour to 100g butter, plus an egg and a little water if needed. It can be a bit fragile, but makes deliciously light pastry.

For anything puff I use the doves farm frozen blocks. It doesn't puff very well, but better than nothing.

Thank you. I was rather hoping you would all say it's pretty much the same as normal pastry! It's for a little party we're having on Friday so I might have to do a batch before then and see how they turn out.

Well worth having a practice run. Just don't over work it, you have to sort of take it as it is, but it should taste fine. I've sneaked it past my DH many times. He thinks he doesn't like gf pastry.

My daughter made puff pastry on Sunday using a recipe on the coeliac UK website and it was really good and fairly easy to make - it was her first attempt at pastry. I’ve also made normal pastry using a standard pastry recipe and substituted the normal flour for gluten free. That turned out really well too. The puff pastry one would make really good mince pies

For homemade gf shortcrust pastry, or shortbread, a little bit of mashed banana makes a massive difference to texture/handling.

The frozen justroll ones are ok. There is a new chilled jusrollnpuff- haven’t tried it yet but have some in fridge as going to make mince pies with it next week. I’m toying with idea of making marzipan rather than pastry lids in case it’s dense.

For puff use the jusroll gf puff sold in the fridge dept. Our sainsburys does it.
