Cheap and healthy meals

My kids and I don't eat as well as we should. I also try to make sure they get their veg and they snack on fruit and veg but tea times are a quick meal put together that night not necessarily be that healthy. Does anyone have any VERY simple recipe ideas for someone on a very tight budget? I've been looking on BBC etc but everything seems to have so many ingredients. I'm not good in the kitchen and I don't enjoy cooking.

Always a hit here is veggie noodle stir-fry. I buy amoy or other noodles, chuck them in a pot to soften while I stir fry a few papers, carrots, whatever veg they'll eat, throw in the drained noodles and some soy sauce on top. Takes approx 10 mins if you include peeling and chopping time. I add prawns, chicken, scrambled egg, cashew nuts or peanuts if needed.

Veg soup to use up veg slightly past its best with cheesy garlic bread. I find my DC prefer non lumpy soup so it all gets whizzed up.

Butternut squash - roast in a tray. Nice as roast veg, or mushed and stirred into a risotto, or butternut squash and bacon soup.
Meatballs - mince, breadcrumbs and herbs with tomato sauce with grated veg hidden in.

There's also a great youtube series called struggle meals. It's American so they do meals under 2 dollars. It's very watchable and has given me some good ideas. I also follow £1meals on Instagram.

Egg fried rice is always a hit here. Quick, easy, uses up leftovers and is a really good way to get a lot of veg into one dish!

I usually use spring onion, some ginger and garlic pasta, and peas (GOT to have peas in egg fried rice!) and then whatever other veg I have on hand - courgette, carrot, pepper, broccoli, green beans, sweetcorn etc.

We're pescetarian so I sometimes add prawns but DS is not keen so usually just have a veggie version.
