I just bought a pressure cooker from Aldi last week but don't know what to do with it now ((blush))

Has anyone got any good recipes so I can try it out? Or are there any good websites or recipe books?

thanks

Stella xx

You can cook just about any stew- or soup-type dish in it just as you would normally, only don't put any flour or pearl barley in as IME they sink to the bottom and burn. Cut the cooking time down to one-third of normal once the cooker has reached pressure (that's the general rule-of-thumb). Then release the pressure quickly by opening the vent.

Steamed puds work brilliantly. Prepare just as for ordinary cooking, steam gently with the vent open for 15m, then close the vent and quickly bring to minimum pressure for 30m. Take off the heat and allow pressure to drop at room temperature (ie without opening the vent yourself) before opeing the lid.

Luckily for me, I found an old pressure-cooker cookbook in a 2nd hand bookshop years ago, and because I'm a magpie I bought it, even though I didn't have a pressure cooker at the time - in fact I still lived at home, but was sure that I'd have a pressure cooker one day!

Something more: anything like custard, porridge etc, that you normally have to cook carefully with lots of stirring to prevent lumps or burning or curdling, can be cooked in the pressure cooker by putting it in a heatproof bowl on the trivet over the water in the pressure cooker. It generally wants the lighter pressure, and very little cooking (again the 1/3 time rule-of-thumb, but even less time for smaller quantities).
