What can I do with a cabbage?

Today’s veg box has included a huge cabbage. The savoy green type. What the hell can I do with it? There’s only two of us!

Maybe some sort of soup? Cabbage soup doesn’t sound particularly attractive.

Colcannon (cabbage, potato, bacon, seasoning)

Cabbage braised in white wine with butter and seasoning

Cabbage heart baked in foil with vinaigrette

Red cabbage - cabbage braised in red wine, spices and citrus juice / rind eg clementine

If we have cabbage as a side we will have pretty much a whole Savoy between the two of us. Great stuff.

Sauté in butter with leeks and garlic, lots of salt and pepper
Colcannon (no bacon with mine though)

Cabbage is a bit like spinach and it cooks down to a much smaller quantity than it looks.

With roast beef or pork, I like finely shredded green cabbage briskly stir-fried with a finely shredded leek and/or garlic, put the lid on and let them both simmer together for 5 mins, stir in a spoonful or two of double cream and nutmeg before serving.

Steam the cabbage and make bubble and squeak with it (50/50 with cooked potato or preferably left over potatoes and veg from the day before).

Shred finely and add to minestrone soup or mixed vegetable soup in the last 10 mins of cooking time.

Use the white middle part to make coleslaw.

Or just cook it and have as a side vegetable as you would with broccoli or green beans.

Slice finely and use in stirfry

Shed, and use to make Chinese "seaweed"

Use instead of Cavolo Nero in a pasta dish

Stuff leaves with mince or sausage meat mixture and bake with tomato sauce.

Layer in a potato dauphinoise or Boulanger dish

Chop and steam to serve with baked ham joint, mash, and parsley sauce. A classic dish.

Fry 2 onions sliced into half moons with 2 peppers sliced into strips and two cloves sliced garlic, then add cubed chorizo, fry until the oil is red, then add half the Savoy cabbage, shredded. Put the lid on until wilted down and toss through the hot red chorizo oil. Eat with Spanish omelette, bread, croquettas etc.

Or, for an Italian rather than Spanish take:

Fry 2 onions sliced into half moons in olive oil, add a tablespoon of fennel seeds and a tablespoon of dried mixed Italian herbs. Add 12 pork chipolatas or 6 pork sausages cut into small chunks like meatballs and fry till cooked. Add half the Savoy cabbage, shredded, and toss through the porky oil. Eat with garlic bread.

Cabbage is delicious! If it is a really big one cut in half through the bar & then half again, removing the middle ‘core’. Finely shred the leaves and quickly sauté in a large saucepan either with a big knob of butter or glue of olive oil, plus a table spoon- sized splash of water and salt & pepper. Use a lid and you’ll find it almost sauté-steams, takes literally 5mins. Next time try it with a pinch of fennel seeds, or a shredded leek, or even a pinch of chill flakes and dash of fish sauce.

I stir fry mine with a bit of bacon and garlic.

It’s really nice braised a bit too with white beans and fish.

I love cabbage season

Fry with leeks or onion, and bacon if you are not veggie. This then freezes well and can be used in a variety of ways:

  • re-heated in a frying pan as a green-veg side with lots of things
  • stirred into leek and potato or parsnip soup
  • added to mash to make bubble and squeak (my fave - shape the bubble and squeak into disks and have with a fried egg, or have it with sausages/ as a side with anything)

Cut some into wedges and roast with other veg. Use the rest shredded in a stir fry.

Have it with a roast and do this -
Boil it until still crunchy.
Fry some lardons or sliced bacon in a frying pan until brown then add the cabbage and fry for a few minutes.
Turn down heat and add cream and Parmesan and warm through.
Not healthy but very lush!!!

I realty like cabbage and pea curry. It's not too spicy.

I would also use some of the cabbage to make coleslaw. Home made coleslaw is so much nicer than shop bought - red cabbage, white cabbage, carrot, onion. I also put walnuts, raisins and cashew nuts in mine

We regularly have sautéed cabbage, thinly shredded savoy in olive oil with black pepper. If we have time we may even add chopped crispy bacon to it. Delicious.

Shred finely, rinse, add a teaspoon of salt and leave for a few hours for the salt to suck the moisture out of the cabbage. Squeeze all the water out. Season, add some potato flour, and mix all together, and roll into 2 inch diameter balls. Fry the balls. Have as a side dish, or with a stew.

Cut into six chunks
Place in a rectangle glass dish
Make cheese sauce
Put cheese sauce on top of cabbage
Grate cheese place on top
Bake in oven
