Vegetarian main course for Christmas Day

Can anyone suggest a vegetarian main course for Christmas day? We will be having turkey and the usual trimmings but have two veggie guests this year. I'd like to give them something a bit special, but ideally something I can prepare the day before and just cook on the day. It is going to be a challenge because they are a bit fussy over which vegetables they will eat and don't like blue cheese or goats cheese.

All suggestions welcome.

I vote caramelised onion, goat cheese and walnut quiche if it’s quiche. I’d still be inclined to go with a lentil-based nut roast and a veggie gravy as it Goes better with all the other sides (as long as you don’t use animal fat for the roasties).

I always do the Delia roulade but with cranberry sauce (homemade is best, but jar works too) rather than parsnip. It’s the best thing I eat all year!!!

If you do a basic nut roast you could include some nice red cranberries as a seasonal touch, reserving some to decorate the top, and also flavour the roast with seasonal spices like clove and cinnamon. I used to put brazils and chopped apricots in mine, along with cashews, so it was a bit more “special” or Christmassy.

I suspect if the are fussy eaters than a nut roast won't be welcome. Both Aldi and Lidl have a selection of vegetarian foods (currently available in the freezer section) have a look and see if anything there suits them and their their fuzziness.

To be honest I don't think you should try to 'give them something a bit special' if they are picky. You'll find your efforts wasted. Best find something, even if it's ordinary, that they definitely will eat.
