Mulch mince in blender, throw in a bit of olive oil, onions, garlic, herbs or whatever you fancy.

Make into burger shapes and grill.

I use lamb mince and throw in a gralic clove and some sundried tomato delicious (I squish them hard into round cookie cutters

TheArmadillo · 20/06/2007 15:10

I mix the mince with some onions (then whatever else I fancy - herbs, chili, garlic). Add a beaten egg and some pepper.

Mix and shape into patties.

Then grill or griddle.

I have a question.
Does anyone find theirs are dry?

Is that why you add an egg armadillo?

Kewcumber · 20/06/2007 15:12

lamb mince defionitely not dry - don't use low fat mince and don;t over cook.

bundle · 20/06/2007 15:12

dry might be that the mince is too lean or they're overcooked
i chuck in a splash of worcestershire sauce. or teaspoon of mustard/ketchup

mine aren't dry but you do need a reasonably fatty mince.

I add egg to bind.

Bananaknickers · 20/06/2007 15:14

WOW thanks you lot am off to do them now for tea

Ahhhhhhh

I used extra lean beef mince.
Made a note.
Thanks for that.

bundle · 20/06/2007 15:16

diced mushrooms quite nice too

moopymoo · 20/06/2007 15:18

i add chinese 5spice powder and tomato ketchup

mylittlestar · 20/06/2007 15:21

if you add onion I often find it's better to soften the onion in a bit of oil first. then let it cool.
once cool add them to your mince, herbs, egg etc...

nicer! imho!

Kewcumber · 20/06/2007 15:26

I find if you mulch a bit in the blender and squish hard into a cookie cutter you don't need to bind with egg. The less faffing around the better in my kitchen.

Easy-peasy. Grated onion (not so easy on the eyes), mix it up with lamb mince and garlic, then add herbs and spices if you like - thyme is good. Shape them into patties and grill away!

One thing I like to add as a relish is a basic Italian tomato sauce (slice garlic, fry for 1 minute, add canned tomatoes and simmer for 45 mins). I just add a bit of chilli, reduce it until it's thick and pop it on top of each burger. Yumyumyumyum!
