Diced beef recipes?

We all love beef in our family. Two adults two kids under 4.
But the only thing I seem to make with diced beef is casserole!! Although gorgeous can be tedious if we have it too often.

How do you cook your diced beef?

Looking for something that doesn't include a thousand crazy ingredients but will make the whole family go yum!!

Wow!! Lots of ideas here. When you make the curry / steak pie how do you make them? Don't suppose you have a quick recipe I could pinch?

I only wonder if certain methods of cooking diced beef can make it quite tough? Whereas in a casserole it falls to pieces in your mouth. 😍

Also have heard of stroganoff before but not even sure what it is? Is it not like a stew?

Stroganoff is onions, mushrooms, paprika, brandy and sour cream with the beef. Traditionally fillet but slow cooked is lovely too.

As long as you cook it low and slow it will be tender. Chuck it in a slow cooker even easier.

I don’t do recipes for these but just do my usual thing.
Curry I’d fry off beef which is coated/sprinkled with some cornflour. with onion and other bits - maybe carrots, maybe pepper, maybe baby corn, potatoes, mushrooms or sultanas. . Stir in passatta or tinned tomatoes. Add some stock. Add curry powder. Simmer for hours in the oven. Stir in yoghurt or not depending what’s in the fridge.

Pie I’d cheat and use bought pastry usually for a weekday meal. Similar thing about sprinkling beef with cornflour, frying off with onion, celery and carrots. Then simmering in beer and stock - darker beer is better. Stir in some marmite or Worcester sauce. Leave lid off and simmer until reduced. Then pile into a dish and cover with pastry. I prefer puff and just dangle over sides of the dish. My family love the crispy edge pieces.

For curry, don’t fry the beef off, honestly, (same with chicken) , make the curry sauce and then add the meat. Put it in the slow cooker and leave for a good 5-6 hours minimum. Trust me on this!

Steak and ale pie.

Beef, ale, stock, mixed herbs, and again slow cook, thicken with gravy granules and when it’s cooled down use ready to roll puff or shortcrust pastry and cook off in the oven for half an hour.

Why not fry off meat to seal it? I’ve never put raw meat into a sauce - nor used gravy granules. Is it a slow cooker thing?

What you call casserole is just slow cooking. That's what makes the beef tender.
The basic recipe is the same for most - onion / garlic, brown the meat add liquid and spices. Add different flavours to make it curry / goulash or whatever. So tons of paprika for goulash and fresh cream at the end.

Cherry, it’s just the way it is traditionally done in curry. I’m a chef and had always browned off the meat first, then I worked with an Indian chef for a while and picked up a lot of good advice. It really makes a difference because when you seal the meat, it stops the flavours of the sauce penetrating the meat. Also, to take any bitterness out of a curry, particularly any that are quite tomato based, add a spoonful of honey.

Ooh ok so some different methods re frying the beef off but the general consensus is that beef is generally better slow cooked whatever flavours your adding too it. Looks like I'm gonna be playing around with my slow cooker this weekend!! Exciting!! 😍

Had my slow cooker for three years now and still only know how to make casserole in it. 😬😬 although that dose swap between chicken and beef haha.

Beef, rosemary, red peppers, peppadew peppers onions slow cooked with tin of tomatoes. Add black olives just before the end.

As above, but take out the olives, add lots of smoked paprika some chorizo if you have it and a glug of cream at the end.
