Leeks - your favourite way of cooking them?

I love leeks and want to have them.tomorrow with lamb, but i'm bad at cooking them? What's your best recipe??

Slice them up and in a saucepan with a knob of butter and sprinking of grated nutmeg. Heavenly!

I slice them and crumble a beef oxo into them with some water and cook in frying pan for around 20 minutes

My absolute preferred leeks recipe is braised in the oven and this includes the green parts

I like them in the oven with a white sauce over them. Microwave them for a few minutes first though or they stay a bit squeaky

I cut them up chunkily with potatoes and carrots, roast them with my whole chicken, with a splash of white wine.

Slice them on the diagonal. Fry them gently in butter, well seasoned and with a sprinkling of either fresh chillies or crushed chillies.

Or

Slice them, then boil briefly till only just tender (won't take long), drain and let them steam dry. Make a cheese sauce with 300ml double cream and as much grated mature cheddar as you like, along with freshly ground black pepper and the juice of half a lemon.

In a pan, sliced, with a knob of butter and a splash of water so they don't catch, lots of pepper and lid on the pan. Moderate heat and stir regularly until tender and no longer squeaky.

I slice them and put them into stir fry, along with broccoli & mushrooms. They add a slight 'sweetness' to the spicy, which is lovely.

Oh, I also sometimes pan-fry them with sliced red peppers too.

Slice them finely, cook gently with a splash of apple juice and a knob of butter until they are very soft and sweet.

Like picklemepopcorn's description, but using a splash of white wine instead of apple juice. Basically gently fry with butter till they start softening, splash of white wine, stick lid on the pan & turn heat right down & leave them for ten mins.

Sliced and fried in butter for about 6mins mixed in with finely sliced cabbage and a few frozen peas.

For lamb I would probably also add a cheeky teaspoon of mint for a minted green veg medley.

My mum used to do them whole with a tomato and garlicky sauce. I think she must've par boiled them first then put them in a frying pan with really reduced tinned tomatoes and garlic. They were lovely. I think it might have been called leeks provencale?

I like them as a side dish with Chinese meals.

I sweat them until soft with butter, rice wine, white pepper, Chinese rehydrated mushrooms (which have a really nice squishy meaty texture) and sweet chestnuts. I add a big slice of fresh ginger that I remove after cooking too.

I love leeks and never have them as Dd is not a fan, but I'm going to be trying out some of these recipes just for me.

Nobody mentioned washing leeks first to remove soil between the layers. I always slit them lengthways, rinse, and then slice, but I would not end up with whole leeks or chunks.

Best way is with pork cheeks and slow braised with stock in the oven. Delicious.
