Vegetarian meals for fussy DC's

My DC's age 5&7 both love processed meat and would have sausages everyday if they could. Burgers and meatballs feature heavily on our weekday meals- would love ideas of veggie meals that are child friendly!

My 7 year old in particular is so fussy. Ommlettes and Mac and cheese are grudgingly pushed around the plate.

They both rarely eat anything saucy would love to know what veggie meals your DC enjoy?

Fajitas go down well

Bit of a cheat but quorum sausages are nice too.

Felafel in place of meatballs. In pittas or even on pizza.

Pizza is another good bet.

When mine were smaller they would eat
Minestrone soup
Tomato & lentil soup
Spanish omelette (not very authentic but tasty with onions, potatoes, sweet corn & peas)
Yorkshire puddings with beans and cheese
Baked sweet potatoes, again with beans & cheese
Pasta and tomato sauce
Toast, hummus, fruit, cheese, carrot sticks
‘Mini pizzas’ which were split pitta breads covered with tomato purée and cheese
Tomato and veggie risotto

They weren’t keen on everything, Spanish omelette was and still is a favourite, they are 12 & 16 now.

Ooh falafels is a great idea! Definitely one to try next week.
We usually only have Yorkshire's with a roast but they love them so having them with beans/cheese could work too..

Mine(including fussy Dd1)eat hash brown casserole with either Tesco or Sainsbury's mince (not quorn they hate it despite scarfing quorn nuggets by the bucket load). Onion (diced so fine they don't know it's there) mince, fried add some diced carrot (half boiled) and peas, stir in some nutritional yeast (optional but gorgeous) and creme fraiche (I use oatley but a dairy one is fine). Make a roux then add about 60-100ml boiling water and a knorr veg stock pot mix well. Add to mince mixture. Put into a casserole dish and top with hash browns and grated cheese (or vegan cheese if preferred) and bake 20-25 mins to cook hash browns

Sweet potato wedges and salsa (if you make the salsa yourself you can pack it with veg)
Fried rice with veg in it.

Quorn swedish style "meat"balls (freezer section) are delicious. I bake them in the oven so they get a nice outside then either use with pasta, on pizza (cut in half so they don't roll off lol) and even in a roll with salad. I'm bereft if there's not a bag in the freezer. I'm not feeding kids but these are a firm favourite with me, the big kid.

What about veg cornish pasties, with roasted veg as a filling? Buy ready rolled puff pastry, fill with cooked root veg that you've made tasty with spices that they like, then baked in the oven. If they'll eat melted cheese (sounds like one won't) then add some cheese sauce to the veg. The no-cheese sauce kid could have a spoon of pesto mixed in, instead. Just mark the pasty when you make it, so you know which one is which.

All the kids I know have always loved noodles. You could do a homemade pot noodle. I use dried wholewheat noodles, but you suit yourself. Cook a noodle nest per person in veg stock and throw some frozen peas, sweetcorn, whatever else veg they'll eat in with it. When it's all cooked (5 mins or so), serve with the stock to make a lovely slurpy noodle soup. I'm not sure if it's the food or the disgusting noises you can make with it that my niece loves the most....

Thanks great ideas here! The hash casserole is inspired - I will try that. I have some frozen veggie meatballs in the freezer , will definitely try these over the weekend.
Puff pastry also goes down well so will try a pasty too...
